Weeknight meals: Simple Spaghetti Bolognese recipe

 If there is one dish
that everyone knows how to make its Spaghetti Bolognese. I
made this dish a lot during my college days and still make it now. It is difficult to mess up and the ingredients are affordable. All you need is
ground meat, spaghetti and sauce. I call it the lazy meal because I make it when I’m too tired to cook especially on weeknights. Try serving it over a bed of arugula, with a little parmesan cheese and a drizzle of balsamic vinegar.
1 pound ground turkey or beef
3 cups crushed tomatoes
1 cup beef broth
1/2 a package dried spaghetti
1 onion
3 large cloves garlic
1 stalk celery
1 large carrot
1 handful fresh parsley
1 handful fresh basil
1 tbsp. steak seasoning
2 tbsp. dried Italian herb mix
Salt and freshly ground pepper
– Cook spaghetti per package
instructions, make sure pasta is al dente to prevent a mushy dish
– While spaghetti is cooking, pulse
onion, garlic, carrot and celery in a food processor. Cook the onion mix in a
saucepan with olive oil for about 3 minutes.
Add ground turkey to onion mix,
cook for another 3 minutes then add steak seasoning, tomatoes, broth and
half the parsley and basil.
– Reduce heat and simmer for 10
minutes then add cooked pasta to the sauce.
– Gently mix and add remaining
parsley, basil and serve with shavings of parmesan cheese.
