The past 3 weeks have been so hectic and I admit I have neglected myself a little bit. From drinking 3 cups of coffee a day to ignoring my blog, I really have been a bad girl.
Thanks to a blogger event hosted by lovely Susan from Susan Style Blog last Friday I got the boost I needed to get back on track. There is something about meeting other people with the same goals as you that is very motivating. It was a great event and I could not resist taking pictures of the beautiful views of Boston from Susan’s roof deck.

Since I went out on Friday I decided to keep the rest of the weekend laid back and nothing makes me happier than relaxing at home. Got a hair treatment on Saturday morning , took a trip to the market and ended the day with a great dinner with the BF. For dinner I made potato salad with a honey Dijon dressing and served it with salmon-shrimp patties, sauteed green beans and baby corn. See below for my Salmon-shrimp patties recipe.
12 ounces fresh salmon
8 large shrimps peeled and deveined
2 cloves garlic minced
1 1/2 tbs finely chopped green bell pepper
3 tbsp finely chopped onion
2 tablespoons Worcestershire sauce
1 1/2 tsp old bay seasoning
1 tbsp Dijon mustard
2/3 cup panko breadcrumbs
salt and pepper to taste
- grind salmon and shrimp in a food processor. Make sure not to over process as you will need some small chunks to create some texture.
- In a large bowl mix the salmon and shrimp with the rest of the ingredients. Shape into 4 patties and chill in the refrigerator for a few minutes so they don’t fall apart.
- Cook in a griddle pan for about 3 minutes on each side or until cooked. Serve with a salad or use for burgers.
