What sounds fresh and tasty more than watermelon feta triangles, well maybe there are other things but right now this fresh and bright snack is taking the spotlight. I like to make these on weekends and just set them on the coffee table so we can snack on them while watching tv. Its a very refreshing and light snack to eat especially in the summer. The feta provides a salty contrast to the sweet watermelon which you will love.
Watermelon Feta Triangle recipe
Ingredients
1 quarter medium sized watermelon
1/2 cup Good quality Feta cheese
5 leaves fresh basil
1 tbsp extra virgin olive oil
1 tsp balsamic vinegar
Directions
- Cut watermelon into triangles about an inch or less thick.
- Crumble feta cheese, tear basil leaves into small pieces and place over watermelon slices
- Mix extra virgin olive oil and balsamic vinegar and drizzle over watermelon slices.
- Serve on platter and enjoy!
The balsamic dressing is totally optional and can be omitted. I initially wanted to drizzle the triangles with a balsamic glaze which would have been perfect but I was too hungry to make it so if you are not as lazy as I was you can use a glaze instead. balsamic glazes can be bought in store too, I just like to make everything myself because I get to control the ingredients.
Benefits of eating Watermelon
There are some benefits to eating this dish especially from the watermelon. Did you know that watermelon contains about 92% water which is already a plus as we know water is good for us. In addition to water content watermelons are a great source of Lycopene, vitamin A, vitamin C and Vitamin B6. They also contain good levels of potassium, copper and lots more. The best part of it all is that it is a low calorie and fat free snack, need I say more.

Sadly, I never make it past the inhale as much as watermelon as possible stage as soon as you cut it to consider using it for a recipe. Now, with a little one, it is a fight to see which one of us will get more.
I have never tried this with basil as I usually use mint. Will make a note for when watermelons are back in season 🙂
