Tomato Arugula pizza

Hello everybody! It feels good to be back blogging after a few weeks. Due to some technical issue my blog disappeared and you can imagine my dismay when I could not find it. After numerous calls and emails I am glad to be back. I also realized how my blog has become part of who I am because life felt a little empty without it.
Arugula is one of my favorite greens so when I found a Arugula pizza recipe on Pinterest I had to try it. I served the pizza with large turkey wings for a yummy Friday night meal.

2 pieces Naan bread
2 cups arugula roughly chopped
1 medium tomato sliced
1 cup mozzarella cheese
1 handful basil roughly chopped
3/4 cup freshly grated Parmesan cheese
1/2 small red onion sliced
juice from half a lemon
1/2 cup tomato sauce
2 garlic cloves minced
3 tbsp olive oil
salt and freshly ground pepper
Start by topping the naan bread with tomato sauce, make sure not to put too much sauce as this leads to a soggy pizza. Follow with slices of red onion.
Mix garlic, Parmesan cheese, olive oil, arugula, salt and pepper and top mixture over naan bread. Follow with tomatoes.
Top with mozzarella cheese and bake for 10 minutes or until cheese is melted.
Voila! It doesn’t look as perfect as your fast food pizza but the the taste of homemade pizza made with fresh ingredients is unbeatable.
