Super Easy Black Bean Taco Recipe

It’s the 3rd week in a row that the hubby and I are exploring a mainly vegetarian diet and it has been amazing. We have not gone completely vegetarian as we sometimes have fish or chicken once a week. Eating meatless meals regularly has not only improved our well being, it has also increased our creativity in the kitchen.

Black Bean Taco

This was one of those unplanned recipes which I made for lunch on a Saturday afternoon. I looked in the fridge and we had some leftover cut peppers and cucumbers from our weekly meal prep. I also spotted some flour tortillas in the back of the fridge and thought, why not make some tacos with these ingredients. Everything was ready except the beans which are easy and quick to cook.

I used canned black beans because of their convenience and easiness to prepare. All I did was rinse the beans under cold running water, saute some yellow onions in olive oil and curry powder, then add the beans to the curried onions. The beans are then placed over a bed of arugula and peppers on a warm tortilla. A nice drizzle of bacon cheddar ranch dressing on top brings these tacos from blah to wow!

  • 1 can Rinsed Black Beans rinsed
  • 1/2 Chopped yellow onion
  • 1 cup chopped Persian cucumbers
  • 1 sliced mini bell peppers
  • 2 cups Fresh Arugula

Instructions
  1. Heat a large pan, add olive oil and sauté onions and curry powder. Once onions have softened add rinsed and drained black beans and cook for another 2 minutes.
  2. Top warmed tortillas with arugula, peppers, green onion, beans and a drizzle of ranch dressing.

Shrimp Tacos with chipotle sour cream sauce

Raise your hands if you love tacos! Today’s recipe of shrimp tacos with chipotle sour cream sauce is one that I have been wanting to share for a while. Tacos are so much fun because you get to eat them with your hands and it is almost impossible to have a bad taco. Most foodies will tell you that the sauce is what makes the taco which I agree with. The only thing I regret is that I did not make more. After dinner I noticed my fiancé Marcus was heading over to the kitchen for seconds only to return with a puzzled look on his face because he thought there would be more. I saved the night by boiling some sweetcorn on the cob but next time I will remember to double the servings.

Shrimp Tacos with chipotle sour cream sauce

SHRIMP TACOS WITH CHIPOTLE SOUR CREAM SAUCE

Dressing
  • 1 cup Dean’s DairyPure Light Sour Cream
  • 3 tbsp Ranch dressing
  • 1/4 cup Chopped chives
  • 1 small chipotle pepper in adobo sauce blended
  • 1 small garlic clove minced
  • 2 tbsp. fresh lime juice
  • Kosher salt and pepper to taste

Fillings
  • 1 lb bag (about 20) raw shrimp season with 1 1/2 tsp taco seasoning
  • 2 Persian cucumbers diced
  • 1 cup cherry tomatoes diced
  • 1 small (1/3 cup) red onion diced
  • 1 cup cooked sweetcorn
  • 2 medium avocados cut into wedges
  • 2 tsp onion powder
  • 1 tsp cumin
  • 1 tbsp Extra virgin olive oil

SHRIMP TACOS WITH CHIPOTLE SOUR CREAM SAUCE


Instructions
  1. Mix the dressing ingredients and set aside in the refrigerator

  2. Cook shrimp for about 4 minutes on each side and set aside.

  3. In a large bowl mix cucumber, tomatoes, onion, sweetcorn, onion powder, cumin, chives, olive oil, salt and pepper.

  4. Warm tortillas in a pan or microwave then fill with shrimp, mixed veggies, avocado and top with the sour cream sauce.

Easy shrimp and beef taco recipe

Some of my favorite meals are the rustic kind that I don’t put much thought into and usually involve me throwing things together without following a recipe. These shrimp and beef tacos are a perfect example. I made them on a Friday night when we wanted something light and quick. I knew they were a hit when the BF had more than 3 servings.

Ingredients
2 cups raw shrimp
1 small package stir fry beef or skirt steak
1 avocado 
2 cups shredded lettuce
steak and shrimp seasoning of your choice
6 restaurant style flour tortillas
Salsa:
2 plum tomatoes (seeds removed) chopped
1/2 a medium red onion chopped
2 green onions sliced
1/4 a jalapeno chili (seeds removed) chopped
1 clove garlic minced
1 handfull cilantro chopped
1 tbsp fresh lemon juice
2 tbsp olive oil
salt and pepper to taste
dressing:
1/4 cup mayonnaise
1/2 tsp Dijon mustard
1 clove garlic
1 tsp sriracha sauce

Directions
– Mix all the salsa ingredients in a bowl and set aside allowing flavors to combine
– Mix all the dressing ingredients and set aside
– Cook shrimp and beef in a hot pan till golden brown for about 5 minutes each, its important not to overcook the meat. 
– Use the same pan you used for the meat to heat up the tortillas 
– Layer the tacos as you wish. I like to start with the dressing, lettuce, salsa then the meat.
