Yummy Caprese inspired Sandwich

Have you ever took a bite of a sandwich and were like wow that was good? I like to get that feeling every time I eat one. Whenever I make a sandwich I put a lot of thought into it because it has to hit the spot. People tend to put whatever they find in their refrigerators into their sandwiches and settle for average. You know at Spoons and Stilettos we don’t like average so today I will share with you a recipe for a great sandwich.  

Making a great sandwich involves taking into consideration the different textures and flavours of all the components. This is how I like to make a Caprese style sandwich .

Before you start layering the sandwich make sure you have all the ingredients ready. Good quality Mozzarella and tomato are very important so please buy the best you can.

Cut about 2 inches off the top of the bread and remove the insides until you have a bread bowl. Brush the inside of the loaf with olive oil and start layering. 
I started off with the roasted peppers followed by onions then basil.
Follow with a layer of Mozzarella cheese
Then tomato with freshly ground pepper, salt and olives.
Followed by turkey bacon
Repeat layers to fill the loaf

Cover with the top of the loaf.

Seal with cling wrap, put a heavy object on top of the sandwich  and stand for about 3 hours. 

1 large french boule or any round of bread
1 ball of good quality fresh Mozzarella cheese
2 large vine tomatoes sliced
1/2 red onion sliced thinly
8 pieces roasted red peppers
2 handfuls fresh basil 
4 strips of turkey bacon cooked
olive oil 
a handful of stuffed olives sliced
salt and freshly ground pepper 
  • Cut about 2 inches off the top of the bread and remove the dough until you have a bread bowl.
  • Brush the inside of the loaf with olive oil and start layering. 
  • You may layer it however you want however make sure you have different textures in each layer. I started with red peppers, onions, basil, tomato, olives then cheese and repeat layers again. 
  • Cover with the top of the loaf and and seal with cling wrap. 
  • Put something heavy over the sandwich like a pot and let sit for about 3 hours.

Chicken Mozarella Sandwich

Looking for a quick weeknight meal ? try these delicious chicken mozzarella sandwiches. This is a recipe I came up with one evening by accident. I had planned on making basil chicken with rice until I realized I was out of rice. My sister has been bugging me to post a sandwich recipe so I thought why not make chicken sandwiches for dinner. Since the chicken had already been marinating in the fridge this recipe took me less than 20 mins to prepare which was a plus. If you are a working girl like me and don’t want to spend a lot of time in the kitchen, I suggest marinating it the night before so it is ready to cook when you get home from work.

4 boneless chicken thighs
1 clove garlic minced
1/4 red onion sliced
2 tsp balsamic vinegar
Olive oil
3 dorot chopped basil cubes (can be found at Trader Joe’s)
8 slices of fresh mozzarella cheese
1 tomato thinly sliced
salt and pepper to taste
4 plain bagels toasted
3 tbsp mayonnaise
1tsp Dijon mustard
1 tsp chopped fresh chives


  • Add garlic, thawed basil cubes, balsamic vinegar, 2 tsp olive oil ,salt and pepper to chicken thighs and marinate in the refrigerator for an hour. (You can use finely chopped fresh basil if you don’t have the frozen basil )
  • Add 2 tbsp olive oil in heated pan and cook marinated chicken thighs until chicken is cooked and browned.
  • Preheat oven to 350 degrees F.
  • mix mayonnaise, Dijon mustard and chives in small bowl and set aside.
  • Place slices of mozzarella on top of each chicken thigh and cook in oven until cheese starts to melt.
  • Meanwhile toast bagels and thinly slice the red onion and tomato.
  • Spread mayonnaise dressing on bagel, add onion slices, then place chicken and cheese over onions and top with sliced tomato.
