Those of you who are familiar blog will recognize my simple carrot and cucumber recipe from a previous post. This recipe is fresh, bright and zingy making it a great summer recipe. Smoked Duck & Bok Choy Stir Fry Recipe

If you haven’t tried smoked duck this stir fry recipe is a good starting point as it very simple and easy to make. This is one of those quick recipes that is perfect for weeknights when you don’t want to spend hours in the kitchen. The smokiness of the dark already provides most of the flavor so adding fresh garlic and ginger is all you need for a delicious dish.

Smoked Duck and Bok Choy stir fry recipe


2 smoked duck breasts

4 medium sized bok choy

1 small red onion sliced

2 green onion sliced

1 cup halved cherry tomatoes

3 cloves garlic

2 inches fresh ginger cut into small strips

1 handful fresh basil

1 tbsp duck fat

1 tsp olive oil

salt and freshly ground pepper


  1. Separate leaves from bok choy heads and rinse thoroughly with cold water. Bok choy sometimes has some sand caught between leaves so this step is very important.
  2. Slice duck breast into small pieces, no seasoning necessary
  3. Heat a large wok, add duck fat and olive oil. Add sliced duck breast and cook for about 5 minutes until its browned then add the onion and cook for another minute.
  4. Add garlic, ginger tomatoes and bok choy for about 2 minutes till boy is soft and wilted. Be sure not to overcook, bok choy should remain bright green with a little bite.
  5. Serve hot in a bowl over rice or noodles if you prefer.

Benefits of eating Bok Choy

For those of you who are not familiar with bok choy, it is a type of chinese cabbage that doesn’t really look like most of the cabbages out there because of its long stalks. You can find it chinese grocery stores or some grocery stores like Whole foods, Trader Joe’s or Wegman’s . There are many benefits to eating bok choy because of its high nutritional content. Studies have shown that bok choy has a high beta carotene content making it one of the best sources of vitamin A. It is also a good source of fibre,  vitamin K, Vitamin C, Potassium, Folate, Calcium and many more.

3 Delicious Ways to Cook Butternut Squash

Did you know that butternut squash is actually a fruit not a vegetable? I too thought it was a vegetable until I read a Wikipedia article that told me otherwise. Fruit or vegetable this golden yellow food is delicious and should be included in your dinner rotation. There are so many ways to cook squash but today I am focusing on the 3 best ways to cook it.

3 Delicious ways to cook Butternut Squash

  1. Butternut Squash soup:This is by far one of the best ways to cook squash and I have an easy recipe for you – Roast 2 medium squash for about 45 minutes in the oven with a drizzle of coconut oil, nutmeg, salt and pepper. While squash is cooking in the oven dice a large peeled apple, chop 1 medium onion, mince 3 cloves of garlic and slice a large carrot. Sauté the onion, garlic, carrot and apple in a large saucepan with 1 tbsp coconut oil. – When squash is cooked, scoop flesh into the onion mix, add 5 cups chicken broth and let simmer for 10 mins. Puree everything in a large blender and serve. You can add coconut milk, fresh ginger or cinnamon if you like but I find this recipe to be delicious and simple.
  2. Spaghetti Squash: Ever since zucchini noodles got the spotlight in 2015 now everybody is creating noodles out of every single vegetable and I have to say its a trend that I definitely support. An easy recipe: Use a spiralizer to create noodles from squash then sauté the noodles in garlic, salt and olive oil – When noodles are cooked and soft after about 5 minutes remove from heat and add a handful of chopped cilantro, 1 tbsp fresh lemon juice, sliced green onion and freshly ground pepper and serve.
  3. Mashed squash: This is another very simple and delicious way to serve squash. Roast squash in the oven till soft then mash with a little butter, nutmeg salt and pepper. I like to serve mashed squash with a nice piece of steak or grilled chicken and greens.

You will notice that I roasted the squash in 2 of the recipes and this is because it gets sweeter and buttery when it is roasted as opposed to boiling it as some people prefer to do. Do you have a squash recipe or recipe idea you want to share? Your comments are always appreciated!

Easy and delicious chili recipe

This Chili recipe is very easy and tastes so good you
will find yourself going back for seconds. It’s the kind of meal you want to
enjoy on the couch in front of the TV. The avocado on top is a thing I like to
do and is worth a try.
1 pound ground turkey
1 15 oz can red kidney beans
1 15 oz can cannellini beans
1 jar diced tomatoes
2 tbsp tomato paste
¾ cup beef broth
¼ cup red wine (optional)
1 large onion
½ medium green pepper chopped
4 cloves garlic minced
1 stalk celery
1 small carrot
3 tsp chili powder
1 tsp ground cumin
1 tsp paprika
½ tsp curry powder
olive oil
salt and pepper
– Prepare a mirepoix by finely chopping the onion, carrot and celery in a food processor
– Preheat a large Dutch oven or sauce pot, add olive oil, followed by mirepoix and cook
for about 3 minutes till veggies are soft.
– Add garlic, green pepper and half the spices and cook for another minute
– Add ground turkey, season with salt, pepper and remaining spices. Cook for about 3
minutes till turkey is no longer pink.
– Add tomato paste, beans and cook for about 30 seconds then add tomatoes, wine and
beef broth.
– Reduce heat and let simmer for about an hour to let flavors develop
– Serve in bowls topped with sliced avocado and fresh cilantro. 

Savory Tuesday : Easy roast potatoes

Ever wonder how some cooks always make the perfect roast potatoes with crispy outsides and fluffy insides? The secret is ‘vinegar’  I  recently found out that soaking potatoes in cold water and vinegar before roasting or frying will increase the crispiness. Since this discovery my homemade fries and roast potatoes always come out perfect and I am glad to share this with you. Below is a easy recipe for roast potatoes. Enjoy!


10 medium size russet potatoes
2 tbsp olive oil
1 tbsp truffle oil
2 tsp garlic powder
1 tsp paprika
Salt and freshly ground pepper


  • Preheat oven to 350 degrees .
  • Peel potatoes then soak in cold water and vinegar for 5 minutes.
  • scrape surface of potatoes with a fork , this is mostly for presentation.
  • Par-boil potatoes in salted water for about 15 minutes. Potatoes do not need to get fully cooked, this step speeds up the roasting process and results in fully cooked potatoes.
  • Drain potatoes then sprinkle paprika , garlic powder, salt , pepper and coat potatoes with olive oil and truffle oil.
  • Roast potatoes for 20 minutes until potatoes are golden brown and crispy.
  • Serve with your favorite roast and gravy
