Maple Infused Sweet Potato Hash

When you think of maple syrup, you think pancakes or waffles however there are so many other fun ways to use maple syrup. Think refreshing cocktails, maple infused desserts and savory dishes like my sweet potato hash made with Runamok Maple syrup, caramelized onions and a hint of cumin. The maple syrup is what takes the sweet potatoes from regular to out of this world.

I have tried a number of maple syrup brands and Runamok Maple is certainly the best maple syrup I have had. This maple syrup is so good it was even on Oprah’s list of favorite things in 2016. In addition to their pure maple syrup Runamok Maple also carries infused, barrel aged and smoked maple syrups. variety of infused flavors like Pecan wood smoked, Cardamom, Cinnamon vanilla, Elderberry , Market lime-leaf and more.

For my maple infused sweet potato hash I used the hibiscus flower infused syrup which complemented the sweet potatoes really well. With so many flavor options there are so many fun things you can do with this maple syrup.

Maple Infused Sweet Potato Hash

  • 4 large sweet potatoes cubed
  • 1 medium red onion diced
  • 1 clove fresh garlic minced
  • 1/2 tsp cumin
  • 1 tsp Garlic powder
  • Extra virgin olive oil
  • salt and freshly ground pepper to taste

  • 4 large sweet potatoes cubed
  • 1 medium red onion diced
  • 1 clove fresh garlic minced
  • 1/2 tsp cumin

Maple Infused Sweet Potato Hash
  1. Preheat oven to 350 degrees
  2. Parboil the sweet potato cubes for about 10 minutes in 3 cups water mixed with 1 tbsp maple syrup . Make sure not to overcook, the sweet potatoes should still remain firm.
  3. Cool potatoes for about 5 minutes in the freezer then season with cumin, garlic powder, onion powder, salt, freshly ground pepper and coat potatoes with olive oil
  4. Line a baking dish with foil, spray some non stick spray and layer the potatoes into one layer. Cook for 10 minutes then drizzle with 2 tbsp maple syrup mixed with a tbsp olive oil. Cook for another 5 minutes till browned on the edges.
  5. While potatoes are cooking in the oven saute' onions and garlic in olive oil until caramelized.
  6. Add the cooked sweet potatoes to the onions, drizzle more maple syrup and serve.

Who doesn’t like easy weeknight meals, I know I like something delicious and quick during the busy work week. After the success of my previous post on easy dinner ideas I have decided to share more meal ideas for you to try. These Easy weeknight meals are delicious and full of flavor.

Meatless Monday: 3 cheese pasta with egg whites.

3 cheese pasta with egg whites

The reason for egg whites in this meal is because the yolk was used to make the sauce and I did not want to throw away the whites.

Recipe: Cook pasta per package directions. While pasta is cooking beat 3 eggs yolks in a bowl, add 1/4 cup cream followed by 1/4 cup parmesan cheese, mix till well blended and set aside. Heat a large deep pan, add 1 tbsp of duck fat or butter, 3 cloves of minced garlic and cook for about 1 minute. Add the sauce to the garlic and simmer for 3 minutes then mix in pasta with fresh basil leaves, capers, cherry tomatoes, mozzarella balls and shredded cheddar cheese. cook remaining egg whites and serve.

Tip: You may skip the egg whites and use them for something else later. This meal serves 3 people, I used 3 1/4 cups pasta.

This is one of my favorite dishes and it is really easy to make so don’t let the steak and shrimp intimidate you.

Recipe: Cook rice in a rice cooker so you can focus on the other components of the dish. While rice is cooking season skirt steak and shrimp with your favorite seasoning preferably something robust. Set the meat aside and make a simple salsa with chopped tomatoes, red onion, cilantro and red peppers. Dress the salsa with a tsp lime juice, olive oil, salt, cumin and pepper. Shred some romaine lettuce and mash avocado with salt, a drop of lime juice and pepper. Cook steak and shrimp on stove top till done to your liking about 10 minutes. Let the steak stand for 5 minutes before cutting and serve.

Tip: I used the Trader joe’s barbecue rub with coffee & garlic to season my meat, this rub is amazing!

Easy Weeknight meals
Oven baked chicken and fries with cucumber radish salad.

Oven baked chicken, fries and salad

This is similar to one of the dinners I shared previously however this time I made a cucumber radish salad on the side. I make this oven baked dish every other week because its just that good.

Recipe: Preheat oven to 350 degrees F. Line deep baking dish with foil and spray organic olive oil non stick spray over the foil. Layer a small package of precut oven fries in the dish, top with seasoned chicken wings and cook in the oven for about 45 minutes. While chicken and oven fries are cooking gently mix 2 sliced persian cucumbers, 1 radish, red pepper, handful cherry tomatoes, 1/4 red onion and avocado in a salad bowl. Dress the salad with a light dressing of olive oil, lemon juice, salt and pepper. Once chicken is cooked serve and enjoy!

Tip: Marinate the chicken the night before so that when you get home it is ready to cook and flavors have developed. I marinated the wings in a sweet and spicy Korean barbecue sauce with fresh garlic.

3 Delicious Dinners for the Busy Cook

I have heard so many people tell me that they tend to run out of ideas for dinner and end up making the same dishes every week. I used to be that person and I am sure some of you can relate. I know Planning dinner can be a pain in the neck so I am going to share 3 delicious dinners you can try for your next meal. You will be glad to know that one of them is a takeout meal but its Spoons and Stilettos style which means it’s not the typical fast food.

Herb Roasted Chicken with Chickpea mash and cucumber salad

1. Try roasting a whole chicken and serve it with a garlicky chickpea mash instead of potatoes or rice. For the chickpea mash all you need to do is puree’ 2 cans of organic chickpeas, with garlic, olive oil and a little lemon juice . A simple cucumber salad with cherry tomatoes , red onions, herbs,  feta with a vinaigrette is the perfect accompaniment to this meal.

2.  Don’t feel like cooking or don’t have the time, how about some Turkish food. Takeout does not have to be junk food so you can order a balanced meal that is packed with veggies and grains. What I love about this meal is that it looks and tastes like something I would have made at home. You can try other options like a sushi dinner, Korean, Thai, Italian. The important thing is to include vegetables and make sure that its a nutritious meal.

3.  I call this the lazy meal only because its very easy to prepare. If you don’t have time, use ready cut fries instead of cutting the potatoes yourself, I love the Alexa brand for this. layer the fries in a shallow oven safe dish, place marinated chicken over the fries and cook in the oven for 45 mins. I pretty much use whatever I have in the fridge for the Arugula salad like tomatoes, red onion, red peppers. I also threw in some kiwi for the fun of it.

How to Make Delicous Zoodles

I admit I joined the zoodle party very late because I thought cooking them would be tedious until I found out they are fairly easy to make.  For those who are new to them, Zoodles are simply noodles made from zucchini squash and they have half the calories and are more nutritious than regular pasta. This makes them a healthy choice for those on weight loss journeys or even those who just want a healthier option.

There are 3 key things you need to know in order to make great zoodles:

  1. You will need a gadget to make the zucchini into noodle shapes. Some people like to use a knife to cut the zucchini into strips which is fine but it doesn’t create that real noodle shape. I use a small little gadget called a veggetti which a friend got me. The veggetti costs less that $20 and can be found at target or kohl’s. They also have some fancy and slightly expensive spiralizer machines that you can get if you dont mind spending the bucks.
  2. Zucchini squash naturally contain a lot of water, therefore its important to squeeze out as  much water as you can from the squash to prevent soggy noodles. This step is very important if you want to make noodles with the right texture. In order extract a lot of water from the zucchini the trick is to generously add salt to the noodles then wrap them in a clean towel. After 15 minutes squeeze the water using the towel as the sieve.
  3. Do not overcook the noodles. My suggestion is to sauté’ the noodles in olive oil for about 2 minutes.  Some like to eat them raw too if that is your style.


Now that you have your perfect zoodles the next step is to make a fun dish with them. There are many ways to eat noodles however my favorite way to eat them is with a meat sauce and I also like to coat them with a light dressing made with olive oil, garlic, fresh herbs and pepper.

The best guacamole recipe

Guacamole has got to be one of the best things that Mexico has introduced to the world. If it was acceptable I would eat it for breakfast, lunch and dinner. Guacamole is simply a dip made of mashed ripe avocados with salt however the possibilities are endless with guacamole. You can add anything from onion, garlic, tomatoes and jalapeños.

This is how I like to make my guacamole however you can play around with ingredients to your liking. I call this recipe the best because that work has been thrown around when a few people try it.


3 ripe medium sized avocados

1/2 lime juiced

1 handful fresh cilantro chopped

1/2 small red onion finely chopped

1 garlic clove minced

1 small jalapeño pepper finely chopped (optional)

1/2 tsp ground cumin

salt and freshly ground pepper to taste


– In a large bowl or pestle and motor mix all ingredients to your desired consistency . I like mine smooth chunky meaning some sooth bits and some chunky bits.

– Add salt and pepper to taste
