Forget all the complicated tricks you have been told will give you the crispiest fried chicken. I have the secret, and I am sharing it with you today! It is pretty easy and is probably something you have in your pantry already…Argo® Corn Starch! Instead of using flour only, using a half and half split of flour and Argo® Corn Starch will help give you the crispiest fried chicken that is juicy on the inside and crispy and airy on the outside. The Argo® Corn Starch is what will make your fried chicken recipe outstanding.

For our secret ingredient, the only brand I use is Argo® Corn Starch because it is the best and leading corn starch brand with over 100 years of quality and trust over multiple generations. The Argo® yellow container with the blue lid is so familiar and can be found in most households. Argo® Corn Starch is naturally gluten free, which is great for those following a gluten free diet. Most people know corn starch mainly as a thickening ingredient for sauces, but it has other uses in addition to making the crispiest chicken. Here are other ways to use corn starch:

  1. Corn starch is a good binding agent for baked goods. It is the glue that holds desserts together including puddings, cookies, and pies.
  2. Coating marinated meat or veggies with corn starch is a popular technique in Asian cooking, as it helps give the meat a nice crisp, velvet texture very quickly.
  3. Adding Argo® Corn Starch to your sheet pan tofu before cooking will make it nice and crunchy on the outside. This is great when making a tofu salad or rice bowl.
  4. Use it when making ice cream. Yes, Argo® Corn Starch can be added to homemade ice cream recipes too. Adding Argo® Corn Starch to an ice cream mix helps bind the ingredients, prevents ice crystals forming and creates a smoother ice cream texture.

The Crispiest Sriracha Fried Chicken Recipe

Fried chicken is such a great treat, and when it is homemade, you can control what goes in it and how it is made. This crispiest chicken recipe can be baked, deep fried, or air fried. For this recipe, we use an air fryer instead of deep frying in oil for lower fat content. The chicken is marinated in buttermilk and Sriracha sauce, dipped in an egg wash, then coated with the 50% Argo® Corn Starch and 50% flour combination, mixed with garlic powder, onion powder, dried herbs and paprika. It is very simple. You can get your crispiest chicken with Argo® Corn Starch.

    3. 1/4 cup Sriracha sauce
    4. 1/2 cup Argo® Corn Starch
    5. 1/2 cup all purpose flour
    6. 2 tsp smoked paprika
    7. 2 tsp garlic powder
    8. 2 tsp onion powder
    9. 1 tsp dried Italian herbs
    10. 1 large egg

    3. Remove chicken from the buttermilk mix and slowly dip each piece into the egg wash first and then the flour mix. Shake each piece gently to remove excess flour and Argo® Corn Starch and then place on a cooling rack for five minutes.

Cajun Tofu Tacos with Lettuce Wraps

Cajun Tofu Tacos with lettuce wraps! Yes, you heard that right. Just when you thought tofu was boring and only good for rice dishes and stir-fries, today we are making tofu even more fun with tacos.

The great thing about tofu is that it absorbs flavors very well so you can season it to your liking. We are going bold with Cajun spice because of its delicious flavor profile. Using Romaine lettuce leaves instead of flour tortillas is another twist to this recipe that is perfect for spring and summer lunches.

Cajun Tofu Tacos with lettuce wrapsThe key to great tofu dishes is good quality tofu. There are so many brands to choose from these days so it is easy to find one you like. One of my favorite tofu brands is Mori-Nu Silken Tofu. Their tofu is sold in a unique aseptic package that protects the tofu from light and bacteria which gives it a long shelf life without refrigeration and preservatives, which is absolutely awesome. This is especially great if you use large amounts of tofu and don’t want to go to the grocery store regularly to restock. I bought 12 boxes and stored them in the pantry. It has been so convenient.

Mori-Nu Silken Tofu Extra Firm

Cajun Tofu Tacos with lettuce wraps recipe:

The idea to make Cajun-spiced tofu tacos came about after I ate some Cajun-spiced fries that were super delicious. I thought to myself, if Cajun spice can make these simple fries taste amazing, I bet it would make tofu even more amazing. Boy, was I right! The tofu absorbed the Cajun flavor and tasted fantastic. I later found out that others had already tried this combo and it wasn’t my great invention. Nevertheless this recipe has become a regular in our home and is a true winner.

This Cajun Tofu Tacos with lettuce wraps recipe is very easy and quick to make. All you need is tofu, Cajun spice, olive oil, salt and lettuce. To add another level of flavor, I added a simple homemade salsa to the tacos. So simple yet so delicious.

Sausage and Kale Spaghetti Recipe

A quick and easy meal is always the goal on a weeknight and this sausage and kale spaghetti recipe fits the bill. All you need is some good sausage, spaghetti, kale and peppers to make this easy dish. I used hot Italian sausage and have used lamb sausage for this dish before. The sausage is a nice break from ground beef because of its delicious and unique flavor.

Sausage and Kale Spaghetti Recipe

I really love how this dish comes together with the different textures of ingredients. You could use spinach in place of kale but I like the bite that kale provides when its not overcooked. Peppers are a well known accompaniment to sausage so adding them to this dish was a no brainer. I did not go heavy on seasonings since the sausage is already packed with flavor. Just some garlic, salt and pepper will do the trick.

Sausage and Kale Spaghetti Recipe

Noticed how I mentioned a good sausage in the beginning of this post. The reason is that sausage is not recommended in most diets especially the Paleo diet, but since I am not a believer in restrictions, I suggest being very picky with your sausage. Some sausages are packed with meat fillers and lots of fat which I try to stay away from. I have decided to share some good tips for picking a good sausage that you may find helpful.

How to choose a good sausage

  1. Choose a sausage with at least 85% meat and less than 5% saturated fat.
  2. Stay away from sausage that contains additives and preservatives like sulphur dioxide
  3. Avoid sausage with very high sodium content.
  4. Always check what kind of meat is the sausage. Sometimes the front of the package may say chicken sausage but contains chicken and pork or other kinds of meat.
  5. Avoid sausage with fillers like maize, maltodextrin, hydrolysed vegetable protein and more. Fillers are used to add more weight to the sausage.

It will be very hard to find a sausage like this but they certainly exist. I usually get mine at Whole Foods and they are worth the extra 2 or 3 bucks.

Ground Beef Stroganoff Recipe

We just had a cold and snowy weekend and although I prefer warmer weather, I do like the snow on weekends when I don’t have to drive to work. The best thing about winter weather is the comfort food and rich dishes that we get to cook. This delicious and hearty ground beef stroganoff recipe is always a big hit. My recipe is a variation of the traditional stroganoff recipe but it contains all the basic ingredients like beef, mushrooms and onions.

Ground beef stroganoff and pasta

What makes beef stroganoff stand out is the addition of sour cream compared to other meat sauces. As you know here at Spoons and Stilettos we like things a little healthier so I did substitute the sour cream with a low-fat yogurt. If you like it creamier definitely go for the sour cream or heavy cream. Either way it will taste good. Another way to lighten up this meal would be to use zoodles instead of pasta. Check out my post on how to make delicious zoodles.

Ground beef stroganoff with pasta

Contrary to popular believe eating beef is beneficial to your health. Here are some points to remind you that red meat is totally ok in moderation of course.

4 Benefits of eating red meat

  1. Great source of protein: Protein is a component of every cell and therefore a very important nutrient. It is also used to repair and build tissues and is needed to make enzymes, hormones and other body chemicals.
  2. It is a good source of iron: Red meat probably has the highest concentration of iron than any other meat. Iron plays an important role in the production of haemoglobin and red blood cells.
  3. Good source of Zinc: Zinc helps with the function of many body systems including the digestive system, immune system, metabolism and also helps reduce stress levels.
  4. Contains Vitamin B12 and B6: These are essential for the development, absorption of protein and will help with keeping your nerves and red blood cells healthy.

So there you have it! You can grab yourself that package of ground beef guilt free and make yourself a nice bowl of ground beef stroganoff . Your taste buds and your body will thank you.
