Vegetarian Cauliflower and Chickpea Tikka Masala

After eating mostly Thanksgiving leftovers recently I had a craving for lighter meals and to get back to lighter eating. This Vegetarian cauliflower and chickpea Tikka Masala is exactly what the doctor ordered. Full of flavor and packed with delicious goodness. 

Kevin's Natural Foods Tikka Masala Sauce

We can all agree, there are days we need quick and easy ways to get dinner on the table. On those days, I reach for Kevin’s Natural Foods ready made sauces.

I made this vegetarian cauliflower and chickpea Tikka Masala using Kevin’s Tikka Masala Sauce. This sauce saved me from having to cook the Tikka Masala sauce from scratch plus it’s absolutely delicious! Kevin’s Natural Foods produces some of the best sauces and have become a staple in our pantry. They have a wide range of delicious Keto and Paleo friendly sauces made with natural ingredients. I always feel guilt free when I use their sauces.

Kevin’s Tikka Masala Sauce is a delicious blend of tomato curry made with coconut milk, ginger, and Indian spices. It is usually used with chicken but it’s versatile enoigh to be used in veggie dishes. I decided to try it with cauliflower and chickpeas. I certainly did not regret this decision!

I served the cauliflower and chickpea Tikka Masala with cilantro lime rice. Compared to other watery sauces, Kevin’s Tikka Masala sauce is thick and hugs the veggies for rich flavor with every bite. The hubby who is not usually big on vegetarian meals even went for seconds, which is always a good sign.

Vegetarian Cauliflower and Chickpea Tikka Masala

  • 1 head cauliflower
  • 1 15.5 oz can chickpeas rinsed and drained
  • 1 7 oz packet Kevin's Natural Foods Tikka Masala sauce
  • 1/2 cup vegetable broth
  • 1 large yellow onion diced
  • 1/2 large green bell pepper diced
  • 1/2 cup carrot diced
  • 3 cloves fresh garlic minced
  • 1 tsp fresh ginger minced
  • 1/2 cup fresh cilantro chopped

  • 1 head cauliflower

Vegetarian Cauliflower and Chickpea Tikka Masala
Instructions
  1. Preheat oven to 375° F. Cut cauliflower head into smaller pieces. Season with salt, pepper and curry powder. Drizzle with olive oil and and roast in the oven for 15 minutes.
  2. While cauliflower is cooking, mince garlic and ginger then dice onion, carrots, green pepper into very small pieces. Sauté onion mix for about 5 minutes till onion is translucent and slightly browned on the edges.
  3. Add Tikka masala sauce to onion mix, add vegetable broth, chickpeas and roasted cauliflower. Add chopped cilantro stalks, simmer on medium to low heat for at least 15 minutes or until vegetable broth has evaporated. Top with cilantro leaves and serve.
Recipe Notes

This dish goes very well with Basmati rice and can also be served with naan bread. You can also substitute the cauliflower and chickpeas with chicken or pork.
