Easy Homemade Cranberry Juice

One of my favorite drinks is this tasty and refreshing Homemade Cranberry Juice with a splash of orange and lemon. As you know I am all about simple recipes that anyone can make. This one is no different.

To say this recipe is easy is an understatement. Once I learned how simple it is to make I was mad at not adding this refreshing drink to me repertoire sooner. All you need is Cranberries, Water, Sweetener (preferably honey or agave) and Citrus to get an invigorating homemade cranberry juice. I used Cape Cod Select frozen cranberries for this drink because of their great quality.

If you follow this blog you may remember the easy cranberry oatmeal squares that I made recently using frozen cranberries too. Frozen cranberries are ideal to have in the freezer because of their convenience, versatility and overall nutritional benefits.

Why not just buy cranberry juice you may wonder. In addition to the health benefits you will get from drinking cranberry juice, there are so many reasons why you should consider making your own cranberry juice:

  • You can control sugar content: Reading the nutritional label on store bought cranberry juice, or any store bought juice for that matter, you’ll notice the extremely high sugar content. It is absolutely scary how much sugar they put in those juices. This alone is my main motivation of making homemade cranberry juice. 
  • Homemade Juice has no preservatives: Another thing you will notice on the nutritional content of store bought cranberry juice are the preservatives added to the drink. If a product contains ingredients that aren’t natural or difficult to pronounce I tend to avoid it.
  • Cost Saving: A cup or two of Cape Cod Select frozen cranberries yields much more juice than you’ll normally get from store bought brands.

Easy Homemade Cranberry Juice Recipe

  • 8 cups Cape Cod Select frozen cranberries
  • 12 cups water
  • 1/4 cup Agave Nectar or half cup sugar
  • 1 cup orange juice
  • 1/4 cup lemon juice

  • 8 cups Cape Cod Select frozen cranberries
  • 12 cups water
  • 1/4 cup Agave Nectar or half cup sugar
  • 1 cup orange juice
  • 1/4 cup lemon juice
Instructions
  1. Place water and cranberries in a large pot and bring to boil. Reduce heat and simmer for 1 and a half hours.
  2. Strain liquid into another large container using a fine strainer. Press with a wooden spoon to extract all the cranberry liquid.
  3. Stir in Agave nectar or sugar, orange and lemon juice. If using sugar you can bring it back to a boil to dissolve it, otherwise just mix without heat if using Agave.
  4. Remove from heat, pour into a nice juice container, cover and cool in the refrigerator.

We like ours lightly sweetened however you can add more sweetener if you wish.

KALE, MINT AND APPLE GREEN JUICE

I am not one to make New Year’s resolutions but since I am preparing for my wedding this summer, I have decided to make changes to my diet. One of them is to start each day with a green juice or smoothie. Green juices have plenty of vitamins and nutrients which assist with improved overall health, improved energy and healthy glowing skin. I call it the beauty juice.

There are so many recipe variations for green juice and every now and then I create a recipe that needs an extra boost of sweetness. Since I do not want to fill my juice with lots of sugar, I use Truvia Natural Sweetener which is a naturally sweet, zero-calorie, Stevia based sweetener. I like to use it for veggie green juices which need some sweetness and also like to add it when using green apples as my fruit component. I love that is it naturally derived and is certainly a great way to add sweetness with zero calories.

KALE, MINT AND APPLE GREEN JUICE

Truvia Natural Sweetener is very versatile and can be used in various recipes and drinks. Pretty much it can be used instead of sugar in most recipes. You can use it in baked goods, oatmeal, coffee and even in salad dressings. I have used it in glazed carrots, coleslaw salad and it was delicious.

I got my Truvia Natural Sweetener at my neighborhood Shaw’s market, however you can purchase yours at your local grocery store. I chose the box which contains 40 packets of sweetener as I like the convenience of using packets. One packet has a sweetness equivalence of 2 teaspoons of sugar with zero calories which is pretty awesome.

                    

Kale, Mint and Apple Green juice Recipe

The ingredients for this recipe are very simple and easy to obtain. Fresh organic kale, mint, apples, a squeeze of fresh lime juice and a packet of Truvia Natural Sweetener is all you need. You can substitute kale with spinach if you prefer.

When it comes to creating a juice its important to consider the veggie fruit content. There should be more veggies than fruit, at least 3/4 should be veggies. This kale, mint and apple green juice is light, refreshing and very green. You feel a boost in your energy not long after drinking it. It is best served immediately before the natural enzymes in the produce start breaking down but you can place it in a well sealed glass container and drink it a couple of hours later. I made a huge amount in the morning, drank some of it at home and packed some in glass bottles to take to work.

Making the juice is extremely easy with a juicer. First juice the kale followed by the apples and then some sprigs of mint. Turn off the juicer and add a squeeze of lime juice and a packet of sweetener.

Step 1: Wash and assemble the ingredients next to the juicer then quarter the apples.

Step 2: Process the kale in the juicer first followed by the apples and mint.

Step 3: Stir in a packet of Truvia Natural Sweetener and squeeze in juice from 1/2 a lime.

Step 4: Drink and enjoy immediately. If you are taking some to work or anywhere place in a well sealed glass container and try to drink within 4 hours.

Juice madness: Pinapple, Carrot and Beet juice

Is eating healthy one of your new years resolutions? If so I would like you to join me on  my juicing journey. I have always been a health fanatic but the realization that I will be 30 in a couple of years has made me take my health more seriously. The National Cancer Institution recommends eating 5 servings of vegetables and and 3 servings of fruit a day. I don’t know about you but this can be very hard to do and I have found that juicing is the best way for me to achieve this. I am already noticing changes in my skin, energy and overall health after a few weeks of juicing.

Today I am making a Pineapple, carrot and beet juice which is one of my favorite combinations.This juice is more on the sweet side and I do not recommend making it everyday. It is important to make juices that are low in sugar as well to balance it out. A low sugar example is a kale, cucumber, apple and ginger juice which I will be sharing soon.

 Juicing is easy and fun, here are a few pointers for beginners,

1. The first thing you need to start juicing is to invest in a good juicer. Juicers range from $30 to hundreds of dollars. If money doesn’t grow on trees in your area I suggest the Breville compact juice fountain which retails for $100. This is a reasonable price if you are looking for good quality but don’t want to spend too much. I have had mine for 2 years with no issues. 

2. The next thing is to buy good quality fruits and vegetables. I prefer organic produce for juicing however non organic is fine as long as you wash the produce thoroughly with a natural vegetable rinse to remove any chemical residue.

For this recipe you will need 4 carrots, 1 medium size beet peeled, fresh ginger (about an inch) and 1 1/2 cups pineapple chunks. This is enough to fill 2 glasses.

3. Chop vegetables and fruit into medium pieces and remove pineapple skin before juicing. Most juicing machines are easy to use, all you have to do is throw the fruit and vegetables in the shoot and voila! The beet gives this juice a beautiful deep red color while the pineapple and carrot take it to another level.

3. Juicing is effective everyday combined with a healthy diet. You will get maximum benefits from juice when you drink it immediately because it starts to lose its nutritional value the moment it is made. Drinking your juice in the morning before ingesting other foods is highly recommended so your body can absorb all the nutrition.
