I am sure you have heard so much about the instant pot, currently one of the hottest kitchen gadgets out there. I just got mine and I am obsessed with it. In just one week I have already made butternut squash soup, mashed potatoes and a one pot chicken and rice dish. Today I am sharing a delicious Instant pot coconut rice recipe. Coconut rice is great with stir fries, curries or by itself. We had ours with mutton curry for Sunday dinner and it was delicious.

The Instant Pot is an intelligent multi-cooker with 7 functions including a pressure cooker, slow cooker, rice cooker/porridge maker, sauté/browning pan, steamer, yogurt maker and stockpot warmer. The Instant Pot cooks meals faster with less energy while preserving more nutrients.

Imagine coming after home after work having forgotten to defrost your meat. With instant pot you can cook food from a frozen state with great results. If you love beans you dont have to worry about cooking them for hours, with instant pot it takes no time to cook dried beans. This is great for your pocket as dried beans are much cheaper.

My Instant Pot was from Target and it was delivered to me in less than a week which was good as I hear that sometimes you have to wait weeks to get one on other sites. The instant pot comes in different models the lux, duo, duo plus, ultra and smart. I wanted to get the smart model but could not justify the extra cost so I went with the duo model. The duo model has pretty much the same functions as the smart besides the fancy bluetooth technology.

I could go on and on about the instant pot but all I can say is I am glad I bought it. I can’t stop talking about it you would think I work for Instant Pot. I really just love it and it has made my life in the kitchen much easier. Stay tuned for more instant pot recipes!

Instant Pot Coconut Rice Recipe
Prep Time 5 minutes

Ingredients
  • 2 cups jasmine rice
  • 1 cup unsweetened coconut milk
  • 1 1/2 cups water
  • 1 cup mirepoix this is a mixture of chopped onion, celery and carrot
  • 1 tbsp coconut oil
  • 1/2 tsp salt
Prep Time 5 minutes
Cook Time 25 minutes

  • 2 cups jasmine rice
  • 1 cup unsweetened coconut milk
  • 1 1/2 cups water
  • 1 cup mirepoix this is a mixture of chopped onion, celery and carrot
  • 1 tbsp coconut oil
  • 1/2 tsp salt
Instructions
  1. Turn on instant pot to saute' then add the coconut oil and cook mirepoix for about 2 minutes till onions are translucent.
  2. While mirepoix is cooking. Rinse rice under cold running water for at least a minute till water runs clear then add the rice to pot.
  3. Press cancel to stop sautéing function. Add coconut milk, water, salt to pot and mix gently.
  4. Close the lid. press the manual button and cook at high pressure for 3 minutes, cancel and natural release for 20 minutes.
Recipe Notes

The mirepoix which is a mixture of chopped onion, celery and carrots is optional. You can make plain  coconut rice by skipping the first step.

Savory Tuesday : Easy grilled cheese sandwich

Ever have days when you are craving chocolate,  pizza or ice cream ? Well, you are not alone. As much as I am a health nut, every once in a while I crave something cheesy or sweet. Yesterday I was craving a grilled cheese sandwich all day so I made one for dinner.
I believe that deprivation is never the answer to a happy life , so if you are craving that piece of chocolate go ahead and grab it. The important thing is moderation, just make sure you don’t do it everyday and stick to healthy eating 90% of the time.
Spoons and Stilettos: Easy grilled cheese sandwich.

Ingredients:

2 slices wholewheat or white bread
1 tbsp butter
2 tsp chopped red onion
1 slice provolone cheese
1 thin slice Swiss cheese
1 thin slice ham
1/4 tsp minced fresh garlic (optional)

Directions

  • Place small skillet on burner over medium heat until hot.
  • Spread butter on each slice of bread then place 1 slice in the skillet making sure the buttered side is down. 
  • Quickly place a slice of the provolone cheese on top of the slice of bread then top with onion and garlic. Place slice of ham over onion followed by Swiss cheese then top with the other slice of bread. Make sure buttered side is facing up.
  • After a minute or when the first side of bread is browned , flip the sandwich and brown the other side for another minute or until it is cooked to your satisfaction.

Voila! you have yourself a tasty grilled cheese sandwich.

Tortellini salad

 
I recently became a BJ’s member and I have to say it is one of the best things to happened to my kitchen.The ability to buy groceries in bulk has allowed me to stock up my pantry with a variety of foods.There are certain ingredients I believe should be stocked up in all pantries, examples are beans, tuna, pasta, chicken stock etc. The wholesale stores also carry perishable foods and the other day I picked up a twin pack of fresh three cheese tortellini for only 9.99. Fresh tortellini only takes 5 minutes to cook making it great for those weeknights when you don’t want to spend an eternity the kitchen.Tortellini is great served with pasta sauce, in soups or in salads.I have a simple recipe for a tortellini salad which is delicious and quick to prepare.

Tortellini Salad

1 20 oz package of fresh tortellini
4 Campari tomatoes quartered
1/4 fresh cilantro chopped
1/2 cup fresh parsley chopped
1/2 cup fresh basil chopped
1 1/2 cup frozen peas and sweetcorn
3/4 cup green onions sliced
1/2 cup olive oil and herb marinated mozzarella small balls halved
1 tsp freshly ground black pepper

Directions

  • In a small saucepan boil frozen peas in salted water for 3 minutes and set aside.
  • In a large saucepan add tortellini to boiling water and cook for 5 minutes .
  • While tortellini is cooling down chop parsley,basil and cilantro.Slice green onions, cut tomatoes into quarters and half the mozzarella balls.
  • In a large bowl add 2 tablespoons of the olive oil and herb marinade, gently mix with all the the ingredients.
  • Season with salt and pepper.
