How to make a perfect omelet

Have you ever tried to make an omelet, only to have it fall apart or stick to the pan? I have been there and let me tell you it’s no fun if you are a perfectionist like I am. Omelets tend to intimidate a lot of home cooks but they are actually easy to make if the right techniques and ingredients are used. Today I am sharing my little secret to creating a perfect omelet  that easily slides out of the pan. The NEW PAM® Spray Pump Olive Oil.

There are certain things that are necessary when making a perfect omelet like prepping the filling before you start cooking the egg, following the simple ratio of 1/2 cup filling to 2 eggs and last but not least, using the miracle ingredient PAM Spray Pump Olive Oil. When I heard about the PAM Spray Pump Olive Oil I had to give it a try, and it did not disappoint. In fact I haven’t made a bad omelet or any dish that sticks to the pan since using this non stick spray.

In addition to its amazing non-stick cooking. PAM Spray Pump Olive Oil has many advantages in comparison to regular oil and butter. This includes the fact that you can easily control the amount used with the spray pump thus using fewer calories. I love that it is a non-stick option with no artificial colors, flavors or preservatives, the spray is non aerosol/propellant-free! What makes it even more outstanding is that it doesn’t have that chemical after taste that you get from other cooking sprays.

Other than omelets you can use the cooking spray for things like cakes, cookies, pies to prevent them from sticking. It’s great for frittatas or breakfast casseroles. A great idea is to spray Pam cooking spray in muffin tins then pour in a  mixture of beaten eggs, steamed broccoli, bacon and cheese to create fun egg cupcakes the kids will love. You can even use the spray when making waffles and pancakes with the comfort of knowing that they will not stick to the pan.

Now lets talk about how you can make the perfect omelet. Its easier than you think .

How to make the perfect omelet.

  1. Spray a little of  PAM® Spray Pump Olive Oil  to a unheated omelet pan. Turn on heat to medium. 
  2. Beat eggs, water, salt and pepper in small bowl until blended and pour into the omelet pan. Allow the eggs set a little along the edges.

 3. Gently push the cooked parts from edges toward the center allowing uncooked eggs to touch the pan surface. Continue doing this until most of the eggs is cooked. When the egg is set but not all the way through, can start placing fillings on one side of the omelet.

4. Now comes the fun part. Gently fold the omelet in half with a spatula. Do this by running the spatula around the edge of the omelette and then lifting it up.

  • 2 extra large eggs
  • 1 piece bacon cooked and chopped
  • 1/2 cup cooked spinach
  • 1 tbsp Feta cheese
  • 2 pumps about 1 tsp PAM spray pump olive oil
  • Kosher salt and pepper to taste

  • 2 extra large eggs
  • 1 piece bacon cooked and chopped
  • 1/2 cup cooked spinach
  • 1 tbsp Feta cheese
  • 2 pumps about 1 tsp PAM spray pump olive oil
  • Kosher salt and pepper to taste
Instructions
  1. Whisk eggs with a pinch of salt and a tsp of water.
  2. Spray the pan with Pam spray pump olive oil. Heat skillet over medium-high heat.
  3. Pour the eggs into the skillet and turn the heat down to medium-low. Once the eggs are almost set, add the fillings (bacon, spinach and feta) on one side.
  4. Flip the empty half of the omelette over the fillings and cook for another minute and serve

How to make boiled eggs in the Instant pot

I know what you are thinking, everyone knows how to make boiled eggs and do not need to learn a new way to cook them. Well folks, if you have not made boiled eggs in the Instant pot you are missing out.

What makes the Instant Pot so much better than the old-fashioned way is that it requires no supervision, no worrying about turning off the pot when the eggs are done. Best of all they are always cooked perfectly.

How to make boiled eggs in the Instant potAll you need is one cup of water, Eggs and the instant pot. One cup of water will be sufficient for any amount of eggs.

This method is perfect for weekdays. I like to put the eggs in the pot right before I jump in the shower and they are done after I am out. What I love about Instant pot hard boiled eggs is that they peel so much easier than boiled eggs made the traditional way. I don’t know if it is the pressure and steam that helps with this but I love it. I have not had the not so pretty boiled eggs with shell stuck on the whites since I started using this electric pot.

How to Make Eggs in the Instant pot
Instructions
  1. Pour water into the Instant pot and place the eggs on the rack that comes with the pot. You can use a steamer basket or egg stand.
  2. Close and lock the lid then set timer for 5 minutes at high pressure. Pressure will build for about 5 minutes
  3. It will take 5 minutes for the eggs to cook. After 5 minutes when the beep goes off, perform a quick release by opening the steam valve.
  4. Place cooked eggs in a bowl with cold water for about a minute and peel to reveal perfect eggs.
Recipe Notes

Play around with the cooking time and pressure release. If you prefer softer boiled eggs, cook on low pressure and for slow release for 5 minutes for really boiled eggs.

How to make a perfect sunny side up egg

If you have seen my Instagram account you may have noticed that I post a lot of breakfast pictures with sunny side up eggs. As a result I have received a few requests from people who want to know how to make sunny side up eggs. Because I like to share my tricks, today I am sharing my method of making a perfect sunny side up egg. Sunny side up eggs are simply fried eggs which are not flipped and cooked on one side with the yolk remaining intact .

While there are so many ways to eat a sunny side up eggs, the most simple way is with with a slice of toast. Another way to eat them is to make a sandwich with the egg,  sliced tomato, lettuce and bacon like I did above.

Another way I like to eat sunny side up eggs is with avocado toast, sliced cucumber, turkey bacon, arugula and sliced red bell pepper. Furthermore when I make this sandwich I prefer the edges to be a little crispy to provide a nice little contrast to the soft avocado. How I achieve a crispy edge is by cracking the egg open in a extremely hot pan and cooking for 1 minute on the stove before placing in the oven.

If you don’t want to use the oven you can make a sunny side up egg on the stove top by covering the pan with a lid while the egg is cooking . Also effective method is to baste the egg with hot oil while cooking. I find the oven the method to be the easiest and less likely to mess up.

  1. Preheat oven to 350 degrees.
  2. Heat olive oil in a oven safe non stick pan.
  3. crack open the eggs into the pan, sprinkle salt and pepper on top and place in the oven immediately.
  4. Cook in the oven for 8-10 minutes depending on how runny or hard you want your yolk to be.

Weekend food diary: Yummy French toast recipe

After a rainy Friday I am glad we had great weather in Boston this weekend . In addition to great weather I enjoyed my time in the kitchen with lamb kabobs and French toast being the star dishes. Unfortunately the lamb kabobs were so good I forgot to take pictures so stay tuned for the recipe.
Sunday morning I was craving french toast so went to BJ’s and got 2 loaves of Challah bread for 5 bucks, jackpot! I saved one loaf in the freezer and I have to say the Challah bread at BJ’s is better than the Trader Joe’s Challah that I usually get. 
French toast is simply bread dipped in a mixture of eggs and milk/cream. Eating french toast is almost like having desert for break fast and I admit to feeling a little guilty after having some. This dish is almost impossible to mess up but there a few important points to remember for good results.
  • Choose the right bread – Challah bread or Brioche are the best for french toast. Also make sure the bread is a little stale so it doesn’t fall apart. I usually cut the slices the night before and leave them out to dry or toast the slices before dipping in egg mixture.
  • Use medium/high heat  – If you place the toast in a extremely hot pan it will brown quickly before its fully cooked so it is best to use medium/high heat.
  • Don’t use too much milk in the mixture – This results in soggy bread.
My french toast recipe
– whisk 5 eggs, 2/3 cup half and half milk, 1 tsp vanilla essence, 1/4 tsp cinnamon, zest from 1 orange, 2 tbsp orange juice, 1 1/2 tbsp honey, pinch of salt in a shallow bowl.
– Dip 8 thick slices of bread into the egg mixture allowing the bread to soak the custard then melt some butter in large pan.
– Fry bread till bread is golden brown on both sides and serve with fruit and a drizzle of maple syrup.

Savory Tuesday : Easy deviled eggs

I am one of those people that loves eggs so much that I can’t go a week without having them. Breakfast without eggs is not a real breakfast as far as I am concerned. Not only are eggs delicious they are a good source of protein and amino acids.
This past weekend my mum had a Easter dinner party at home and she told me she served deviled eggs as the appetizer. I remember thinking what a great idea and why hadn’t I made them before? So of course I decided to make deviled eggs and have fallen in love with them.
I love the way mum served her deviled eggs, garnished with curly parsley on a floral platter with a gold trim. See picture above.
Ingredients

12 eggs
1/3 cup mayonnaise
1 tbsp minced shallot
2 tsp dijon mustard (good quality)
1/4 tsp sriracha or hot sauce of your choice
1 strip bacon cooked and finely diced
salt and pepper
Paprika

Directions

  • Start by hard boiling the eggs for about 12 minutes. Once eggs are cooked run them over cold water and keep them in the water for a few minutes to .
  • Peel the eggs, slice them in half and softly remove the egg yolks.
  • Place the yolks, shallot, sriracha, paprika, mustard salt and pepper in a bowl and mash with a fork.
  • Spoon egg mixture into the egg white halves and top with bacon pieces.
