Easy Homemade Cranberry Juice

One of my favorite drinks is this tasty and refreshing Homemade Cranberry Juice with a splash of orange and lemon. As you know I am all about simple recipes that anyone can make. This one is no different.

To say this recipe is easy is an understatement. Once I learned how simple it is to make I was mad at not adding this refreshing drink to me repertoire sooner. All you need is Cranberries, Water, Sweetener (preferably honey or agave) and Citrus to get an invigorating homemade cranberry juice. I used Cape Cod Select frozen cranberries for this drink because of their great quality.

If you follow this blog you may remember the easy cranberry oatmeal squares that I made recently using frozen cranberries too. Frozen cranberries are ideal to have in the freezer because of their convenience, versatility and overall nutritional benefits.

Why not just buy cranberry juice you may wonder. In addition to the health benefits you will get from drinking cranberry juice, there are so many reasons why you should consider making your own cranberry juice:

  • You can control sugar content: Reading the nutritional label on store bought cranberry juice, or any store bought juice for that matter, you’ll notice the extremely high sugar content. It is absolutely scary how much sugar they put in those juices. This alone is my main motivation of making homemade cranberry juice. 
  • Homemade Juice has no preservatives: Another thing you will notice on the nutritional content of store bought cranberry juice are the preservatives added to the drink. If a product contains ingredients that aren’t natural or difficult to pronounce I tend to avoid it.
  • Cost Saving: A cup or two of Cape Cod Select frozen cranberries yields much more juice than you’ll normally get from store bought brands.

  • 8 cups Cape Cod Select frozen cranberries
  • 12 cups water
  • 1/4 cup Agave Nectar or half cup sugar
  • 1 cup orange juice
  • 1/4 cup lemon juice

  • 8 cups Cape Cod Select frozen cranberries
  • 12 cups water
  • 1/4 cup Agave Nectar or half cup sugar
  • 1 cup orange juice
  • 1/4 cup lemon juice
Instructions
  1. Place water and cranberries in a large pot and bring to boil. Reduce heat and simmer for 1 and a half hours.
  2. Strain liquid into another large container using a fine strainer. Press with a wooden spoon to extract all the cranberry liquid.
  3. Stir in Agave nectar or sugar, orange and lemon juice. If using sugar you can bring it back to a boil to dissolve it, otherwise just mix without heat if using Agave.
  4. Remove from heat, pour into a nice juice container, cover and cool in the refrigerator.

We like ours lightly sweetened however you can add more sweetener if you wish.

Cucumber Mint Mojito: 

The first one is a Cucumber Mint Mojito. Mojitos are my drink of choice when I need a refreshing cocktail during the warmer days. Mojitos are typically made with lime juice, mint, white rum, sugar and club soda. If you have limited time,  Stirrings makes the best cocktail mixers out there. They have the Simple Mojito mixer that is so good your guests will think you mixed it yourself. There is no chemical after taste or extremely high sugar content that you find with other cocktail mixes. Making a mojito using Stirrings mixers is pretty easy. You won’t need to muddle the mint leaves or juice any limes because the mixer has already done that for you. All you need to do is add the alcohol and club soda. I like to add some thinly sliced cucumbers for an added cucumber flavor and fresh mint and limes for garnish.

Ingredients
  1. 6 oz Stirrings Mojito Mix
  2. 8 mint leaves
  3. 2 small Persian cucumbers thinly sliced
  4. 2 limes
  5. 3 oz white rum
  6. 1 can club soda
Instructions
  1. Rim a cocktail glass with salt (I used the Stirrings Margarita Rimmer)
  2. Fill the glass halfway with ice
  3. Add 1/2 the rum, cucumber slices, 4 fresh lime quarters, 4 mint leaves and mojito mix to each glass.
  4. Stir and top with club soda till glass is almost filled about 3/4 full. Stir one more time to combine and serve.

Pineapple Peach Bellini:

The second easy cocktail recipe is a Pineapple Peach Bellini. This drink is for those that like a sweeter and fruity cocktail. Bellinis are typically made with Prosecco and peach purée. Making a Bellini using Stirrings mixers is also very easy. Just mix the Simple Peach Bellini mixer with your favorite Prosecco and you are good to go. 

For this recipe I used the Stirrings Simple Peach Bellini mix with Prosecco, grenadine and pureed frozen pineapple. The addition of pureed pineapple gives it an added tropical flavor unlike the traditional Bellini.

  1. 3 oz Stirrings Simple Peach Bellini Cocktail Mixer
  2. 6 oz Prosecco
  3. 2 tsp Stirrings authentic grenadine
  4. 1 cup frozen pineapple chunks pureed
  5. Sliced Peach for Garnish

  1. Add half the pureed pineapple in one champagne flute and the other half in the second glass

Can you believe New Year’s day is right around the corner! One of my New Year’s goals is to eat and drink well, starting by cutting down on drinks and foods that are not good for me. This non-alcoholic Lime and Lemongrass Sangria is a perfect way to start my year of better eating and drinking.

My Lime and Lemongrass Sangria recipe is super easy. All you need is lemongrass, limes, lemons, mint and Don Victor® Orange Blossom Comb Honey Globe Jar. This drink is better for you than a regular Sangria because it’s alcohol free, has a lower sugar content and better taste with the use of Don Victor® Honey. The honey is raw, filtered and has not been heated or processed which is the best honey you can find in stores.

Creating this refreshing Lime and Lemongrass Sangria is pretty easy and fun. First stop was Walmart to get some Don Victor® Honey. If you need to get some of this yummy honey, don’t go looking for it where standard honey products are located.   4. Use some in your Oatmeal: Add a piece of honey comb into hot oatmeal and stir. It’s hard for me to go back to regular honey for my oatmeal after eating it this way.
  5. Spread it on toasted bread, bagels, pancakes or scones: The other day I spread the honeycomb on a warm toasted bagel then added some cream cheese and a thin slice of prosciutto. It was so simple and so delicious with the perfect balance of sweet and savory.
  6. Eat it by itself: Sometimes you just need something sweet and chewy. Honey comb with satisfy that craving right away.

Non Alcoholic Lime and Lemongrass Sangria Recipe

This Sangria is light, fragrant, fun and is the perfect guilt free drink to start the new year. You can add alcohol if you wish. This drink is great anytime of the year, It would make a great summer time drink for your next barbecue.

  • 3 tbsp Don Victor® Orange Blossom Comb Honey Globe Jar
  • 3 cups Filtered Water
  • 3 cups Club Soda
  • 6 stalks Fresh Lemon Grass
  • 4 medium Lemons
  • 4 small Limes
  • 1 handful Fresh mint leaves

  • 3 tbsp Don Victor® Orange Blossom Comb Honey Globe Jar
  • 3 cups Filtered Water
  • 3 cups Club Soda
  • 6 stalks Fresh Lemon Grass
  • 4 medium Lemons
  • 4 small Limes
  • 1 handful Fresh mint leaves
Instructions
  1. First, make the lemongrass water. Chop the lemongrass stalks into small pieces. You can use a mortar and pestle to grind them a little for more flavor. Place lemongrass in a pot with 3 cups of water. Bring to a boil, then reduce the heat and simmer for 5 minutes.
  2. Strain the water add 3 tablespoons of honey with some comb and stir. Cool the lemongrass and honey mix in glass jar in the fridge.
  3. When ready to serve. Add ice cubes to serving glasses then pour the lemongrass water halfway in the glass and stir in club soda. Add slices of lemon, limes, mint leaves into each glass. Garnish with a lemongrass stalk and lime or lemon slice.
