My Fiance did not believe it when he came home one day and I served him a beef and broccoli rice dinner from the Tai Pei single serve entree range. I had to show him the container to convince him it was not homemade. I usually like to cook but I was having one those nights when I came from work completely drained with no energy to cook. Since we love Asian food, Tai Pei single serve entrees have become our go-to for quick tasty meals on days were cooking is not an option.

Tai Pei has 15 different flavor varieties for their single serve entrees including General Tso’s spicy chicken, Teriyaki chicken, Pepper beef and more fried rice options. Cooking Tai Pei entrees is as simple as placing the package in the microwave for the specified time on the packaging then letting it stand for a minute and voila! The entrees come in convenient packaging that you can eat directly from after cooking. They make a great work lunch and are affordable. I get a lot of satisfaction knowing I am eating really good tasting food away from home.

Delicious Rice bowl dinners

Who doesn’t love delicious rice bowl dinners, I know I do. Rice and quinoa bowls are all the rage these days and understandably because they are very simple to make and packed with nutrients. Tender spicy chicken, sweetcorn, peas, avocado, shredded carrots are all having a party in this first rice bowl.

Why we love chickpeas

Chickpeas also known as garbanzo beans are perfect for meatless meals due to their high protein content. There also great compared to other legumes because they keep their shape and don’t get mushy after long periods of cooking. Last but not least chickpeas are very versatile, they can be used in stews, salads, curries, hummus, delicious rice bowl dinners and lots more. Here are some reasons why chickpeas are good for you.

  1. Chickpeas contain a good amount of protein with about 15 grams a cup.
  2. They are a good source of fibre which helps maintain a healthy colon.
  3. Chickpeas contain vitamins and minerals all which are necessary in keeping a healthy body. They are especially high in folate and manganese.
  4. If you are a vegetarian chickpeas are a good source of iron for non meat eaters.

  1. heat olive oil in a saucepan and cook curry for about 1 minute till fragrant. Add chickpeas to curry reduce heat to low and cook for about 10 minutes and serve.

Zoodle Recipes: Zoodles with lemon curry sauce

Many people associate zoodles with summer dishes however zoodles can be made into hearty dishes perfect for cooler temperatures. These zoodles are served with a warm lemony curry sauce.

To make the curry sauce: sauté minced onion, garlic and curry powder in olive oil for about 2 minutes then add chicken broth, juice from half a lemon and simmer for 10 minutes. Add zoodles and fresh tomatoes, cook for 2 minutes and serve.

Zoodle Recipes: Teriyaki Salmon with lemon and herb zoodles

I cant even begin to tell you how many times I have made this recipe since I started making zoodles. This is a very light and fresh meal, perfect for low calorie diets and it is very nutritious.

Season salmon with teriyaki sauce and let sit for at least 15 minutes before cooking. Meanwhile make the zoodles and mix with lemon herb dressing. To make the dressing mix 2 tbsp extra virgin olive oil, juice from 1 small lemon, 2 minced garlic cloves, 1 handful fresh parsley finely chopped, salt and pepper.

3 Delicious Dinners for the Busy Cook

I have heard so many people tell me that they tend to run out of ideas for dinner and end up making the same dishes every week. I used to be that person and I am sure some of you can relate. I know Planning dinner can be a pain in the neck so I am going to share 3 delicious dinners you can try for your next meal. You will be glad to know that one of them is a takeout meal but its Spoons and Stilettos style which means it’s not the typical fast food.

Herb Roasted Chicken with Chickpea mash and cucumber salad

1. Try roasting a whole chicken and serve it with a garlicky chickpea mash instead of potatoes or rice. For the chickpea mash all you need to do is puree’ 2 cans of organic chickpeas, with garlic, olive oil and a little lemon juice . A simple cucumber salad with cherry tomatoes , red onions, herbs,  feta with a vinaigrette is the perfect accompaniment to this meal.

2.  Don’t feel like cooking or don’t have the time, how about some Turkish food. Takeout does not have to be junk food so you can order a balanced meal that is packed with veggies and grains. What I love about this meal is that it looks and tastes like something I would have made at home. You can try other options like a sushi dinner, Korean, Thai, Italian. The important thing is to include vegetables and make sure that its a nutritious meal.

3.  I call this the lazy meal only because its very easy to prepare. If you don’t have time, use ready cut fries instead of cutting the potatoes yourself, I love the Alexa brand for this. layer the fries in a shallow oven safe dish, place marinated chicken over the fries and cook in the oven for 45 mins. I pretty much use whatever I have in the fridge for the Arugula salad like tomatoes, red onion, red peppers. I also threw in some kiwi for the fun of it.

Product review : Looly’s couscous

I am sad to admit that I just recently started incorporating couscous to my meal rotation and was never a big fan. A visit to Teranga , a Senegalese restaurant in Boston changed my view of couscous. I remember ordering a lamb shank entree’ with couscous and it was so well prepared and tasty. After their delicious couscous I was motivated to try it one more time. I found that cooking couscous in broth and mixing it with other ingredients increases its flavor. 
I received receive a sample of Looly’s couscous through a fellow blogger and was very impressed with how it turned out. The couscous itself was so quick to cook, all I added was some lemon juice, garlic, parsley, olive oil and it was delicious. Being that I am a health nut myself, I love that their couscous is made from wholegrain non GMO wheat. The sample I tried also had some thyme and turmeric in it which was a nice touch. 
Making this was super easy. I started off by boiling 1 1/2 cups chicken broth then added it to a bowl of 1 1/2 cups Looly’s couscous. After covering the bowl I proceeded to make a simple dressing of 1 tbsp lemon juice, 1 tsp minced garlic, 2 tbsp olive oil and a 2 tsp chopped fresh parsley. After the couscous was ready about five minutes I added the dressing and let it sit while I made some salmon and veges to go with it. The picture below shows what it looks like after it has absorbed the broth.
Dinner was ready in exactly 26 minutes including the pan seared salmon and vegetables.
