This is a great summer salad recipe and I love that it only needs a few ingredients. I saw Rachel Ray make this on the food network channel and had to share it with you .I added some dried oregano to give it a little something extra.
1 medium size cucumber thinly sliced
1 cup cherry tomatoes sliced in half
1/4 red onion thinly sliced
2 tablespoons olive oil
2 tsp red wine vinegar
I tsp dried oregano
Salt and Pepper to taste
- Place cucumber ,tomatoes and onion in bowl and dress with remaining ingredients.
- Let stand for about 20minutes before serving.
