With Easter around the corner you will most likely need creative ways to use leftover ham. How about serving Monte Cristo sandwiches made with delicious Hatfield Ham for Easter brunch? I couldn’t think of a more crowd pleasing and delicious sandwich for brunch. The Monte Cristo sandwich is a decadent sandwich that is insanely delicious.

What is the monte cristo sandwich you ask? It is simply a sandwich made with with ham, swiss cheese slices, dipped in an egg mixture and fried in a little butter. I like to think of it as a upgraded grilled cheese sandwich. It is rich and is the ultimate comfort sandwich.

How to make a Monte Cristo Sandwich

Making this sandwich is easier that you would think. The name makes it sound fancy and complicated but just follow these steps and you’ll be golden. 

First, you will need good quality ingredients; especially the ham as it is the star of the dish. You may have noticed from previous posts that I love to cook with Hatfield products. Hatfield pork products are high quality, full of flavor and simply delicious. I also like that they are a family owned, American made company that uses ethically raised meat. You can tell they take a lot of pride in their products. If you follow a gluten free diet you will be happy to know Hatfield is gluten free!

 For this recipe I used the classic Ham Steaks which are very versatile. You can use them for breakfast, lunch or dinner. The Ham steaks are super convenient as they come fully-cooked and are sliced perfectly. You could grill them and have them with mashed potatoes and gravy. Another way would be to cut the hame into small peaces and mix them in a breakfast hash or even a creamy pasta dish. Using Hatfield products like the Ham steaks certainly makes meal time easy, fast and brings out my creativity in the kitchen. 

In addition to the ham you will need fresh eggs, good quality swiss cheese and white bread. This is not the kind of dish were whole grain bread will work, white bread simple gives the best results for this recipe.

Now the fun part. Layering the ingredients. The order in which you layer the ingredients is important. Start with bread, mayo, cheese, ham, then bread, mayo, ham, cheese and bread. The cheese is strategically placed to bind the sandwich.

Next step is to beat 2 eggs, with 2 tbsp half & half, paprika, nutmeg and vanilla extract. Dip the the sandwich into the egg mixture and cook in a pan with 1 tbsp butter and 1 tsp olive oil. Cook on both sides till golden brown

Bacon and Cheddar Fries Recipe

It’s cheat meal day and on cheat days I go big. This month I decided to make some Bacon and Cheddar fries for Saturday lunch. Topped with sharp cheddar cheese, green onions and spicy jalapeños, they are the ultimate indulgence and absolutely delicious.

I love this recipe because it is fast, flavorful and fantastic. I also like that it is finger food that you can totally eat as a meal too. I like to serve them with sour cream on the side but you can use ranch if your prefer. If you were to serve these for your guests on game day you will be guaranteed some very happy guests. They are just that good. Toppings can be anything you want and check out more options.

  • 4 oz Sharp Cheddar Cheese, shredded

Instructions
  1. Bake or air fry crinkle-cut fries according to package (about 23 minutes on 400 degrees). Add salt and pepper after they are cooked. In the same oven crisp the bacon on a tray. Once cooked allow to cool, and chop.
  2. Layer fries in a cast iron pan and top with shredded cheddar cheese, bacon, jalapeños and green onions. Broil for 2 minutes until cheese is melted.

What makes it easy is the blender hollandaise sauce. The traditional method of making hollandaise is using a boiler but ain’t nobody got time for that!

My hollandaise sauce had a thinner consistency but I actually liked the light sauce. If you prefer a thicker and richer sauce you can add more butter. When making this dish, counting calories is out of the question as it is an inherently rich dish. This is the kind of meal you make once in a while so why not go all out.

Easy Eggs Benedict Recipe

  • 4 Eggs
  • 2 English muffins
  • 1 tbsp White vinegar
  • 2 tbsp Fresh chives chopped

Hollandaise Sauce
  • 8 tbsp butter
  • 3 Egg Yolks
  • 1 tsp fresh lemon juice
  • pinch of cayenne pepper
  • salt to taste

  • 4 Eggs

Hollandaise Sauce
  • 8 tbsp butter
  • 3 Egg Yolks
  • 1 tsp fresh lemon juice

Instructions
  1. Cook bacon in the oven until lightly crispy. about 8 minutes. reserve bacon fat

  2. Bring to boil about two cups water, add vinegar and reduce heat till water lighlty simmering.

  3. Melt 8 tbsp butter. Place the egg yolks, lemon juice and salt in the blender. Blend for half a minute till eggs are a light yellow then add the butter till you reach the right consistency.

  4. Crack one egg into a small bowl then gently place into the lightly simmering water. Do it for each egg.

  5. Turn the heat off, cover the saucepan and let sit for 5 minutes then remove the eggs gently with a slotted spoon.

  6. Toast muffin halves before assembling. divide bacon among the muffin halves. Place pached egg over bacon, pour some hollandaise sauce and sprinkle the top with fresh chives.

The Poynt restaurant – Newburyport, MA : New England’s hottest brunch spot.

One of the great things about living in New England is that there are plenty of beautiful surrounding towns to visit. I remember reading an article that mentioned Newburyport as being one of the most beautiful towns in New England, so when I was invited for a day of shopping and brunch there I was very excited to finally take teh tip there.
I went with my blogger BFF Kristin and when we arrived our first stop was brunch at The Poynt a fabulous new restaurant in Newburyport. I loved the decor of the place, an interesting fact is that the interior was designed by world famous interior designer Taniya Nayak.

To say their brunch menu is great is an understatement, it is just pure deliciousness and that means a lot coming from me, one of the worlds biggest food snobs. The stuffed french toast was one of my favorites. It is stuffed with maple infused mascarpone and served with a berry compote…yum.

I also tried the Bananas Fosters Crepes which were delicious. The cinnamon whipped cream really takes the crepes to another level and the rum caramel adds a very unique and tasty flavor.

The Poynt has a in house Pizza oven which means perfect pizza all the time. I had a slice of their breakfast pizza which was another favorite menu item. The breakfast pizza has grilled potatoes, apple bacon, fontina cheese, fried eggs and creme fraiche…need I say more.

You would think after all that eating I would not have room for anything else but the greedy person in me had to order something else. I went with a smoked brisket hash which was topped with poached eggs and jalapeno barbeque hollandaise. This dish is perfect for those that need something savory and filling for brunch.

Poynt gets a Spoons and Stilettos thumbs up and if you happen to visit Newburyport I would recommend The Poynt for brunch. I plan on going back next summer with the boyfriend and cannot wait to try their dinner menu.
