Super Easy Pancake Recipe

I have yet to meet someone who doesn’t like pancakes. They are one of the most comforting breakfast treats and they have remained popular since the old ages. Pancakes remind me of lazy Saturday mornings and they are such a happy meal. There are many good pancake mixes out there however these can easily be made from scratch. This super easy pancake recipe is perfect if you like simple and quick recipes.

Super Easy Pancake Recipe

We made these when my sister came to visit around Thanksgiving time last year and they came out great. As you can tell, they all don’t have the perfect shape and uniform look as those you see in magazines and instagram but I actually like them this way. There is something about effortless, non-perfect and rustic meals that I love.

The trick is to mix the dry ingredients and the wet ingredients separately then adding them to the same bowl. Also avoid over mixing as this can lead to tough pancakes, having some small lumps in your batter is fine.

Pancake toppings are endless. You can do tangy yogurt, syrup, butter, whipped cream, strawberries, honey and so much more. We had ours with raspberries and maple syrup and they were delicious.

Toaster Oven Baked Italian Eggs

I am happy to have had a few days off before the new year began as it meant more time to do the hings I love including cooking. On most weeks I find myself settling for scrambled eggs and toast for breakfast but whenever I have time I like to make something a little more special than scrambled eggs. These Toaster Oven Baked Italian eggs are a great way to up your breakfast game. Eggs baked in a garlicky marinara sauce topped with melted cheese. Its absolute heaven!

Toaster Oven Baked Italian Eggs

This recipe sounds like a lot of work but is actually super easy. The ingredients speak for themselves i this dish. I am a big believer that good quality ingredients are what makes a meal great. You could be using the most advanced technique to cook but if your ingredients are not the best quality your final result will just be ok.

I like to make this dish with leftover homemade marinara sauce but you can use a good quality store bought sauce if you don’t have time to make your own. The Rao’s Homemade brand makes one of the best sauces as far as I am concerned, I highly recommend. Next thing is to make sure you are using nice fresh eggs. I think free range organic eggs always taste a little better but regular eggs will so work. Last but not list make sure you have some fresh basil and good quality cheese to finish the dish.

You can make this recipe in the oven however I like to use my Ninja Foodi toaster oven for something like this. Advantages of a toaster oven is that it is right on your countertop for easy access, it doesn’t require long preheating times, uses less energy and has less clean-up.

Step 4: Bake in toaster over at 325 degrees for 12 – 15 minutes till egg is set to your liking and cheese has melted.

The ultimate Hatfield® Ham Monte Cristo Sandwich

This shop has been compensated by Collective Bias, Inc. and its advertiser. All opinions are mine alone. #EasterWithHatfieldHam #simplyHatfield #CollectiveBias

With Easter around the corner you will most likely need creative ways to use leftover ham. How about serving Monte Cristo sandwiches made with delicious Hatfield Ham for Easter brunch? I couldn’t think of a more crowd pleasing and delicious sandwich for brunch. The Monte Cristo sandwich is a decadent sandwich that is insanely delicious.

What is the monte cristo sandwich you ask? It is simply a sandwich made with with ham, swiss cheese slices, dipped in an egg mixture and fried in a little butter. I like to think of it as a upgraded grilled cheese sandwich. It is rich and is the ultimate comfort sandwich.

How to make a Monte Cristo Sandwich

Making this sandwich is easier that you would think. The name makes it sound fancy and complicated but just follow these steps and you’ll be golden.

First, you will need good quality ingredients; especially the ham as it is the star of the dish. You may have noticed from previous posts that I love to cook with Hatfield products. Hatfield pork products are high quality, full of flavor and simply delicious. I also like that they are a family owned, American made company that uses ethically raised meat. You can tell they take a lot of pride in their products. If you follow a gluten free diet you will be happy to know Hatfield is gluten free!

For this recipe I used the classic Ham Steaks which are very versatile. You can use them for breakfast, lunch or dinner. The Ham steaks are super convenient as they come fully-cooked and are sliced perfectly. You could grill them and have them with mashed potatoes and gravy. Another way would be to cut the hame into small peaces and mix them in a breakfast hash or even a creamy pasta dish. Using Hatfield products like the Ham steaks certainly makes meal time easy, fast and brings out my creativity in the kitchen.

In addition to the ham you will need fresh eggs, good quality swiss cheese and white bread. This is not the kind of dish were whole grain bread will work, white bread simple gives the best results for this recipe.

Now the fun part. Layering the ingredients. The order in which you layer the ingredients is important. Start with bread, mayo, cheese, ham, then bread, mayo, ham, cheese and bread. The cheese is strategically placed to bind the sandwich.

Next step is to beat 2 eggs, with 2 tbsp half & half, paprika, nutmeg and vanilla extract. Dip the the sandwich into the egg mixture and cook in a pan with 1 tbsp butter and 1 tsp olive oil. Cook on both sides till golden brown

Where to find Hatfield Products

Bacon and Cheddar Fries Recipe

It’s cheat meal day and on cheat days I go big. This month I decided to make some Bacon and Cheddar fries for Saturday lunch. Topped with sharp cheddar cheese, green onions and spicy jalapeños, they are the ultimate indulgence and absolutely delicious.

I love this recipe because it is fast, flavorful and fantastic. I also like that it is finger food that you can totally eat as a meal too. I like to serve them with sour cream on the side but you can use ranch if your prefer. If you were to serve these for your guests on game day you will be guaranteed some very happy guests. They are just that good. Toppings can be anything you want and check out more options.

Easy Eggs Benedict Recipe

Did you know that Eggs Benedict is one of the most popular brunch menu items? I always find myself ordering eggs Benny whenever I go out for brunch so I decided to try to make it myself at home. Eggs Benedict is simply an English muffin topped with bacon or ham, poached egg, and a creamy hollandaise sauce layered on top.Easy Eggs Benedict Recipe

Executing the perfect Eggs Benedict can be tricky but it’s pretty straightforward once you get the gist of it. For my first attempt, the results were actually good and I feel great about sharing my easy recipe with you. What makes it easy is the blender hollandaise sauce. The traditional method of making hollandaise is using a boiler but ain’t nobody got time for that!

My hollandaise sauce had a thinner consistency but I actually liked the light sauce. If you prefer a thicker and richer sauce you can add more butter. When making this dish, counting calories is out of the question as it is an inherently rich dish. This is the kind of meal you make once in a while so why not go all out.

Easy Eggs Benedict Recipe

With Valentine’s day coming up you can prepare Eggs Benedict for that special someone. They will certainly feel special when you serve this delectable treat. Go ahead and make some mimosas or serve with freshly squeezed grapefruit juice. Either way, you will feel like a MasterChef and you will get a lot of praise.
