Easy Garlic Broccoli and Tomato salad

Hello Loves!  Today’s recipe is a delicious garlic broccoli and tomato salad, yummy indeed. I find steaming  to be my favorite way to cook vegetables and used it for this recipe. Fresh tomatoes, garlic and herbs are added for maximum flavor. You can have this dish as a side or even with scrambled eggs for a filling low calorie breakfast.

Easy Garlic Broccoli and Tomato salad recipe

Ingredients

2 heads broccoli

1 cup grape tomatoes halved

1 medium  clove garlic

1 tsp juice from a fresh lemon

1 handful fresh parsley or cilantro

1 tbsp good quality extra virgin olive oil

salt and freshly ground pepper

Directions

  1. Set up your steamer or boil salted water in a large pot with steaming capabilities.
  2. Separate heads into small florets and rinse under cold running water.
  3. Place broccoli in the steamer and steam for 5 minutes till it is soft but still has some bite to it, it is very important that it doesn’t get overcooked and mushy.
  4. While steaming, blend garlic, parsley, olive oil, lemon juice, salt and pepper in a food processor and set aside.
  5. Remove from steamer then add tomatoes and dressing immediately. Serve.

This dish is simple but is packed with flavor and nutrition.

Broccoli: great source of vitamin K, Vitamin C and Folate. Also packed with fibre and good source of vitamin B6, Vitamin E, Vitamin A, Potassium and lots more. I always make sure I buy some organic broccoli every week because I always find something to do with it.

Tomatoes: High in Vitamin C, Biotin, Vitamin K , also a good source of vitamin A, Copper, Potassium, Fibre and lots more. Did you know that regular consumption of tomatoes is beneficial for glowing and beautiful skin. This is another food you should include in your grocery cart every week. Tomatoes can be used in lots of dishes from salads, sauces to soups.

Shrimp and Brocolli pasta

I am a big fan of quick, healthy and delicious meals.This pasta dish is perfect for days when you don’t want to spend an eternity in the kitchen. All you need is Shrimp and broccoli from the market and the rest of the ingredients are probably in your pantry.

Ingredients

1oz spaghetti
1/2 lb shrimp (peeled)
1/4 cup Olive oil
2 tbsp clam juice
3 tablespoons pad thai sauce
1 broccoli crown separated
3 green onions sliced
2 heads bok choy
1 tsp fresh ginger minced
1 tbsp curry powder
1 egg beaten
1 tbsp soy sauce

Method

  • In a large saucepan boil spaghetti per package directions, set aside
  • Heat 1/2 of the olive oil in a large wok, add onions and bok choy stems.When onions and bok choy stems are cooked remove from pan and set aside.
  • Add shrimp to the wok and follow with curry powder,cook until shrimp turns pink.
  • Add onion and bok choy mixture to shrimp,add egg and cook for a minute
  • Add remaining ingredients including bok choy leaves and cook for 2 minutes,broccoli should remain bright green and crunchy.
  • Mix spaghetti and shrimp mixture in wok and serve.

I made this dish yesterday and below is a picture of the result.Feel free to add carrots or any other veggie of your choice.
