Easy Eggs Benedict Recipe

Did you know that Eggs Benedict is one of the most popular brunch menu items? I always find myself ordering eggs Benny whenever I go out for brunch so I decided to try to make it myself at home. Eggs Benedict is simply an English muffin topped with bacon or ham, poached egg, and a creamy hollandaise sauce layered on top.Easy Eggs Benedict Recipe

Executing the perfect Eggs Benedict can be tricky but it’s pretty straightforward once you get the gist of it. For my first attempt, the results were actually good and I feel great about sharing my easy recipe with you. What makes it easy is the blender hollandaise sauce. The traditional method of making hollandaise is using a boiler but ain’t nobody got time for that!

My hollandaise sauce had a thinner consistency but I actually liked the light sauce. If you prefer a thicker and richer sauce you can add more butter. When making this dish, counting calories is out of the question as it is an inherently rich dish. This is the kind of meal you make once in a while so why not go all out.

With Valentine’s day coming up you can prepare Eggs Benedict for that special someone. They will certainly feel special when you serve this delectable treat. Go ahead and make some mimosas or serve with freshly squeezed grapefruit juice. Either way, you will feel like a MasterChef and you will get a lot of praise.

  • 4 Eggs
  • 2 English muffins
  • 1 tbsp White vinegar
  • 2 tbsp Fresh chives chopped
Hollandaise Sauce
  • 8 tbsp butter
  • 3 Egg Yolks
  • 1 tsp fresh lemon juice
  • pinch of cayenne pepper
  • salt to taste

  • 4 Eggs
  • 2 English muffins
  • 1 tbsp White vinegar
  • 2 tbsp Fresh chives chopped
Hollandaise Sauce
  • 8 tbsp butter
  • 3 Egg Yolks
  • 1 tsp fresh lemon juice
  • pinch of cayenne pepper
  • salt to taste
Instructions
  1. Cook bacon in the oven until lightly crispy. about 8 minutes. reserve bacon fat
  2. Bring to boil about two cups water, add vinegar and reduce heat till water lighlty simmering.
  3. Melt 8 tbsp butter. Place the egg yolks, lemon juice and salt in the blender. Blend for half a minute till eggs are a light yellow then add the butter till you reach the right consistency.
  4. Crack one egg into a small bowl then gently place into the lightly simmering water. Do it for each egg.
  5. Turn the heat off, cover the saucepan and let sit for 5 minutes then remove the eggs gently with a slotted spoon.
  6. Toast muffin halves before assembling. divide bacon among the muffin halves. Place pached egg over bacon, pour some hollandaise sauce and sprinkle the top with fresh chives.

Easy Strawberry Yogurt Parfaits

Need a quick and delicious breakfast? These Strawberry yogurt parfaits are so easy to make and are delightful to eat. The Strawberry Yogurt parfaits contain only 4 simple ingredients which are plain yogurt, granola, fresh strawberries and a drizzle of honey. We had these on Christmas morning because we knew we would be indulging later on. Parfaits are the perfect light breakfast before a big meal.

I am mad at myself for not having made these before. Parfaits are great to take to work as you can enjoy them at your desk mess free. Just layer the ingredients in a mason jar, seal and off to work you go. Remember to eat them within 2 hrs as the granola will get soggy. You can also play around with the ingredients and use any seasonal fruit. I highly recommend plain yogurt since the flavored kinds tend to be high in sugar. I have even seen some parfaits with quinoa in them, the possibilities are endless.

Parfait filling Ideas:

Fruit Fillings: Pineapple, Blueberries, Bananas, Peaches, Mango, Kiwi, Passion fruit, Pears, Raspberries

Fun Fillings – These are not necessarily healthy but are a great treat more suited to desert parfaits: Lemon curd, Caramel, Crushed cookies, Chocolate mousse, Caramelized bananas.

For granola there are so many options. I like to go to the Whole Foods Bulk sections and usually get 3 different flavors.   1. Layer 1/3 cup plain yogurt into the bottom each glass. Layer strawberries and granola with yogurt until each glass is filled then drizzle with a little honey at the top.

Who doesn’t love donuts? Donuts may literally one of the best treats in the world. I have never refused a donut; it’s just impossible. Anyway before I delve into my love of donuts lets talk about this week’s good eats boston feature. The Farmer Willie’s Craft Ginger Beer Donut and the Privateer Eggnog Donut from Kane’s Donuts.

Kane’s Donuts is always creating fun donut flavors and this holiday is no exception. They partnered with Farmer Willie’s Alcoholic Ginger Beer and Privateer Rum to create the two holiday inspired limited edition donuts. These donuts are not alcoholic, as the alcohol burns off during the cooking process. The alcohol is part of the flavor creation process which results in a deliciously flavored donut.

Hosting a Holiday Coffee and Hot Cocoa Bar

I am still in disbelief that it is already December. I feel like this has been the fastest year we have experienced but maybe its all in my head. After all, they say that time seems to speed up as we age. Anyway before I digress into a discussion about time and age, lets talk about the holidays.

Christmas is a few days away and most of us will have family and friends spend time with us at home. You can treat your guests to a fun breakfast on Christmas morning by hosting a holiday coffee and hot cocoa bar. Imagine steaming cups of coffee and hot cocoa in your PJ’s, I couldn’t think of a better way to spend a winter morning

Hosting a Holiday Coffee and Hot Cocoa Bar

Setting up a holiday coffee and hot cocoa bar is very simple. You can use a small spot on your kitchen counter or use your dining table. Set the bar with anything you fancy, the possibilities are endless. I like bagels and cream cheese so I usually get a bagel bundle from Bruegger’s Bagels. The bundle comes with a dozen or half a dozen bagels and your choice of cream cheese. This time of year Bruegger’s has the seasonal cranberry orange bagels which are absolutely delicious and together with the strawberry cream cheese, its a combination made in heaven.

My coffee and hot cocoa bar is very simple but you can go all out by including toppings like whipped cream, marshmallows, chocolate chips. Your guests can have fun making holiday hot cocoa treats while others drink coffee. A few decorations are a great way to create a festive mood in the spirit of the holidays. I used red paper cups, napkins and plates with Christmas prints.

A coffee and hot cocoa bars is not only for Christmas morning; you can do it after dinner or any winter occasion. This would be a great idea for a kids’ birthday party as well. Just be creative and have fun with it.

How to make boiled eggs in the Instant pot

I know what you are thinking, everyone knows how to make boiled eggs and do not need to learn a new way to cook them. Well folks, if you have not made boiled eggs in the Instant pot you are missing out.

What makes the Instant Pot so much better than the old-fashioned way is that it requires no supervision, no worrying about turning off the pot when the eggs are done. Best of all they are always cooked perfectly.

How to make boiled eggs in the Instant potAll you need is one cup of water, Eggs and the instant pot. One cup of water will be sufficient for any amount of eggs.

This method is perfect for weekdays. I like to put the eggs in the pot right before I jump in the shower and they are done after I am out. What I love about Instant pot hard boiled eggs is that they peel so much easier than boiled eggs made the traditional way. I don’t know if it is the pressure and steam that helps with this but I love it. I have not had the not so pretty boiled eggs with shell stuck on the whites since I started using this electric pot.

How to Make Eggs in the Instant pot
Instructions
  1. Pour water into the Instant pot and place the eggs on the rack that comes with the pot. You can use a steamer basket or egg stand.
  2. Close and lock the lid then set timer for 5 minutes at high pressure. Pressure will build for about 5 minutes
  3. It will take 5 minutes for the eggs to cook. After 5 minutes when the beep goes off, perform a quick release by opening the steam valve.
  4. Place cooked eggs in a bowl with cold water for about a minute and peel to reveal perfect eggs.
Recipe Notes

Play around with the cooking time and pressure release. If you prefer softer boiled eggs, cook on low pressure and for slow release for 5 minutes for really boiled eggs.
