Finally it seems like the weather is starting to warm up a bit and I am already getting excited for spring. One of my favorite things about spring is all the vibrant colors as flowers start to bloom. I draw inspiration from this by incorporating colorful ingredients into my cooking. This Spicy Spring Salmon with Mango Salsa with Texas Pete® Original Hot Sauce is a perfect example of a fun, colorful, delicious dish that’s perfect for spring.
My favorite part of this dish is the spicy mango salsa. It hits all of the flavor notes; It’s savory, sweet, tangy, spicy and pairs very well with salmon. The star of this mango salsa is the hot sauce dressing. It provides the perfect contrast to the sweetness of the mango. A hot sauce dressing is a bit edgy, but I’m all for experimenting with flavors in the kitchen. I used Texas Pete® Original Hot Sauce for this dish as it has the perfect amount of heat, has bold flavor and is the best way to spice up any meal. We use Texas Pete® Original Hot Sauce on everything, including take out and delivery meals, which have become the norm these days.
How to Make a Spicy Mango Salsa
Dice and chop vegetables and fruit; Mango, Persian Cucumber, Sweet Peppers, Red Onion, Cilantro into equally sized small pieces. Cover and set aside in the refrigerator.
Mix dressing ingredients: Texas Pete® Original Hot Sauce, fresh lime juice, fresh lemon juice, lemon zest, Agave nectar, garlic, olive oil, chives in a small bowl and set aside.
Sear salmon on the stove top and finish it off in the oven. While salmon is cooking in the oven, remove salsa from fridge and mix with a little of the dressing. Remove salmon from oven, plate and top with salsa. Drizzle more dressing over the salsa when ready to serve.
The beauty of this spicy spring salmon is that you can serve it with many side dishes. We served ours with grilled Romaine lettuce wedges for a light lunch but you can easily swap the lettuce with rice, quinoa or roasted baby potatoes.
