Finally it seems like the weather is starting to warm up a bit and I am already getting excited for spring. One of my favorite things about spring is all the vibrant colors as flowers start to bloom. I draw inspiration from this by incorporating colorful ingredients into my cooking. This Spicy Spring Salmon with Mango Salsa with Texas Pete® ​Original Hot Sauce is a perfect example of a fun, colorful, delicious dish that’s perfect for spring.

Spicy Spring Salmon with Mango SalsaMy favorite part of this dish is the spicy mango salsa. It hits all of the flavor notes; It’s savory, sweet, tangy, spicy and pairs very well with salmon. The star of this mango salsa is the hot sauce dressing. It provides the perfect contrast to the sweetness of the mango. A hot sauce dressing is a bit edgy, but I’m all for experimenting with flavors in the kitchen. I used Texas Pete® Original Hot Sauce for this dish as it has the perfect amount of heat, has bold flavor and is the best way to spice up any meal. We use Texas Pete® Original Hot Sauce on everything, including take out and delivery meals, which have become the norm these days.

 How to Make a Spicy Mango Salsa

Mango SalsaDice and chop vegetables and fruit; Mango, Persian Cucumber, Sweet Peppers, Red Onion, Cilantro into equally sized small pieces. Cover and set aside in the refrigerator.

Texas Pete Original Hot SauceMix dressing ingredients: Texas Pete® Original Hot Sauce, fresh lime juice, fresh lemon juice, lemon zest, Agave nectar, garlic, olive oil, chives in a small bowl and set aside.

Spicy Spring SalmonSear salmon on the stove top and finish it off in the oven. While salmon is cooking in the oven, remove salsa from fridge and mix with a little of the dressing. Remove salmon from oven, plate and top with salsa. Drizzle more dressing over the salsa when ready to serve.

  • 1 Tbsp Freshly Squeezed Lime Juice
  • 1/2 Tbsp Freshly squeezed lemon juice
  • 1 Tsp Lemon Zest
  • 1 Tbsp Chopped chives
  • 1 Clove Fresh Garlic Minced
  • 1 Tbsp Extra virgin olive oil
  • 1 Tsp Agave Nectar
Broiled Salmon
  • 2 Fillets Salmon
  • 1 Tsp Barbecue Spice Rub
  • 2 Tbsp Extra Virgin Olive Oil
Mango Salsa
  • 1 large Ripe Mango Diced
  • 1 Medium Persian Cucumber Diced
  • 4 Small Sweet Red and Yellow Peppers Diced
  • 1/2 Small Red Onion Diced
  • 1 Handful Fresh Cilantro Chopped

  • 4 Small Sweet Red and Yellow Peppers Diced
  • 1/2 Small Red Onion Diced
  • 1 Handful Fresh Cilantro Chopped
Spicy Spring Salmon with mango salsa
Instructions
  1. Dice mango salsa ingredients; mango, cucumber, sweet peppers, red onions, cilantro and set aside in the refrigerator.
  2. Preheat Oven to 350 degrees and heat up a pan to medium-high heat.
  3. Season salmon with barbecue rub, add a bit of olive oil to hot pan and sear for about 3 minutes on each side. Finish cooking salmon in the oven for another 9 minutes.
  4. Mix all dressing ingredients; Texas Pete® Original Hot Sauce, lemon juice, lime juice, lemon zest, chives, garlic, olive oil, agave nectar. Add a tablespoon of the sauce to the diced veggies and set the rest of the sauce aside.
  5. Remove Salmon from oven, serve warm topped with the spicy salsa. Drizzle more dressing over the salsa as desired.
