If you are looking for an easy meal to make with leftover grilled chicken I have just the thing for you “Chicken avocado wraps” Not only are these wraps delicious, they are also good for you. I used 2 avocados so I did not have to use mayonnaise. Avocados are a healthy source of fats and they contain vitamins A, B6, C, E and K making them a great addition to a healthy diet.
The secret to these delicious wraps is chimichurri sauce. Chimichurri sauce is a sauce of parsley, cilantro, red chilies, lime juice, garlic and olive oil often served with grilled meat. I used leftover chimichuri sauce from the night before which was a time saver.
Ingredients
5 cups grilled chicken thighs cut into strips
2 avocados cubed
2 plum tomatoes chopped
1/4 cup fresh cilantro chopped
1 tbsp diced jalapeno pepper
2 green onions sliced
4 tortilla wraps
for chimichurri sauce:
1 cup Italian parsley
1/2 cup cilantro
1/ 2 tsp red pepper flakes
1 lime juiced
1/2 tsp red chili peppers
2 cloves garlic
1/4 cup olive oil
freshly ground black pepper
Directions
- Place sliced green onions, avocado, 1/2 lime juice and 1/2 tsp black pepper in a bowl then add chimichurri sauce about 3/4 cup. Mix gently.
- Place tomatoes, cilantro , lettuce, jalapenos and tsp olive oil in another bowl and mix.
- heat tortilla wraps in the microwave or oven till soft.
- Start layering tortilla wrap with lettuce mixture , then chicken and top with avocado mixture.
- Fold into a wrap and enjoy!
