Super Easy Black Bean Taco Recipe

Ingredients
  • 1can Rinsed Black Beans rinsed
  • 1/2 Chopped yellow onion
  • 1cup chopped Persian cucumbers
  • 1 sliced mini bell peppers
  • 2cups Fresh Arugula
  • 1 Green onion sliced
  • 1tbsp Curry powder
  • 4 Flour Tortillas
  • 1 Hidden Valley Bacon Cheddar Dressing
  • 2tbsp Olive Oil
Instructions
  1. Heat a large pan, add olive oil and sauté onions and curry powder. Once onions have softened add rinsed and drained black beans and cook for another 2 minutes.
  2. Top warmed tortillas with arugula, peppers, green onion, beans and a drizzle of ranch dressing.
