Parboil the sweet potato cubes for about 10 minutes in 3 cups water mixed with 1 tbsp maple syrup . Make sure not to overcook, the sweet potatoes should still remain firm.
Cool potatoes for about 5 minutes in the freezer then season with cumin, garlic powder, onion powder, salt, freshly ground pepper and coat potatoes with olive oil
Line a baking dish with foil, spray some non stick spray and layer the potatoes into one layer. Cook for 10 minutes then drizzle with 2 tbsp maple syrup mixed with a tbsp olive oil. Cook for another 5 minutes till browned on the edges.
While potatoes are cooking in the oven saute’ onions and garlic in olive oil until caramelized.
Add the cooked sweet potatoes to the onions, drizzle more maple syrup and serve.
