I am sure you have heard so much about the instant pot, currently one of the hottest kitchen gadgets out there. I just got mine and I am obsessed with it. In just one week I have already made butternut squash soup, mashed potatoes and a one pot chicken and rice dish. Today I am sharing a delicious Instant pot coconut rice recipe. Coconut rice is great with stir fries, curries or by itself. We had ours with mutton curry for Sunday dinner and it was delicious.

More about the Instant Pot
The Instant Pot is an intelligent multi-cooker with 7 functions including a pressure cooker, slow cooker, rice cooker/porridge maker, sauté/browning pan, steamer, yogurt maker and stockpot warmer. The Instant Pot cooks meals faster with less energy while preserving more nutrients.
Imagine coming after home after work having forgotten to defrost your meat. With instant pot you can cook food from a frozen state with great results. If you love beans you dont have to worry about cooking them for hours, with instant pot it takes no time to cook dried beans. This is great for your pocket as dried beans are much cheaper.
My Instant Pot was from Target and it was delivered to me in less than a week which was good as I hear that sometimes you have to wait weeks to get one on other sites. The instant pot comes in different models the lux, duo, duo plus, ultra and smart. I wanted to get the smart model but could not justify the extra cost so I went with the duo model. The duo model has pretty much the same functions as the smart besides the fancy bluetooth technology.
I could go on and on about the instant pot but all I can say is I am glad I bought it. I can’t stop talking about it you would think I work for Instant Pot. I really just love it and it has made my life in the kitchen much easier. Stay tuned for more instant pot recipes!

- 2 cups jasmine rice
- 1 cup unsweetened coconut milk
- 1 1/2 cups water
- 1 cup mirepoix this is a mixture of chopped onion, celery and carrot
- 1 tbsp coconut oil
- 1/2 tsp salt

- Turn on instant pot to saute' then add the coconut oil and cook mirepoix for about 2 minutes till onions are translucent.
- While mirepoix is cooking. Rinse rice under cold running water for at least a minute till water runs clear then add the rice to pot.
- Press cancel to stop sautéing function. Add coconut milk, water, salt to pot and mix gently.
- Close the lid. press the manual button and cook at high pressure for 3 minutes, cancel and natural release for 20 minutes.
The mirepoix which is a mixture of chopped onion, celery and carrots is optional. You can make plain coconut rice by skipping the first step.
I haven’t jumped on the instant pot bang wagon. I know it cooks really fast but I have my slow cooker and my pressure cooker. Thinking I don’t need one more big appliance to take up cupboard space. If a person doesn’t have a pressure cooker or slow cooker I could see getting one.
I am obsessed with Instant Pot recipes at the moment (I love how simple they are!). I’ve never tired Coconut Rice before but it looks super yummy.

I’ve never heard of mirepoix, but it sounds like a great mixture to add to a lot of different dishes. We eat a lot of rice in our household, and I would love to try this recipe.

I haven’t tried this kind of dish. But cooking in a pot is the best. Because for me I think ingredients are cooked best on pit. Will copy your recipe in the future.
