Ingredients
Bake
  • 6cups All purpose flour
  • 1/2cups Butter or Butter substitute
  • 2cups water and coconut mixYou can also use coconut milk.
  • 2tsp Baking Powder
  • 2tsp instant yeast
  • 3tbsp White Sugar
  • 1tsp Salt
Fishcake
  • 1/2pound Salted fish (dry salted cod)
  • 1cup All-purpose flour
  • 1large Chopped yellow onion
  • 3cloves Fresh garlic minced
  • 2 Green onions chopped
  • 1tsp ground clove
  • 5sprigs Fresh thyme finely chopped
  • 2 Seasoning peppers finely choppedPreferably Grenadian sweet seasoning peppers
  • 1tsp Pepper sauce
  • 2tsp Black pepper
  • 1/2cup Water
  • 1cup Canola oil for frying
Instructions
Bake
  1. In a large bowl, mix flour, sugar, baking powder, yeast and salt; add butter and rub in using your fingers.
  2. Stir in water and coconut into flour mixture until well blended and can form into a ball.
  3. Place on a floured board or the kitchen counter and knead for a few minutes. Let it rest for about 10-15mins
  4. Divide the dough into about 20 pieces and shape them into balls. Flatten each ball and place on greased baking tray.
  5. Bake at 350°F for 15 minutes or until lightly browned
Fishcake
  1. Boil the fish and change the water after each boil until it reaches your desired salt level. Set aside 2 cups of the salted water for later.
  2. Grind cloves and garlic using a pestle and motar. Chop onions, seasoning peppers, garlic, fresh thyme and green onions. Add to the salt fish together with the clove and garlic mix.
  3. Add about 1 1/2 cups of flour and the reserved water from the saltfish boil and mix till a fluffy consistency is reached.
  4. Heat a canola oil in a deep frying pan. Drop mixture by spoon full into the hot oil, 4-6 at a time until golden brown and crispy on the outside.
  5. Slice each piece of bread in half and place a piece of fish cake between the 2 slices…sooo good.
