Need a quick and delicious breakfast? These Strawberry yogurt parfaits are so easy to make and are delightful to eat. The Strawberry Yogurt parfaits contain only 4 simple ingredients which are plain yogurt, granola, fresh strawberries and a drizzle of honey. We had these on Christmas morning because we knew we would be indulging later on. Parfaits are the perfect light breakfast before a big meal.
I am mad at myself for not having made these before. Parfaits are great to take to work as you can enjoy them at your desk mess free. Just layer the ingredients in a mason jar, seal and off to work you go. Remember to eat them within 2 hrs as the granola will get soggy. You can also play around with the ingredients and use any seasonal fruit. I highly recommend plain yogurt since the flavored kinds tend to be high in sugar. I have even seen some parfaits with quinoa in them, the possibilities are endless.
Parfait filling Ideas:
Fruit Fillings: Pineapple, Blueberries, Bananas, Peaches, Mango, Kiwi, Passion fruit, Pears, Raspberries
Fun Fillings – These are not necessarily healthy but are a great treat more suited to desert parfaits: Lemon curd, Caramel, Crushed cookies, Chocolate mousse, Caramelized bananas.
For granola there are so many options. I like to go to the Whole Foods Bulk sections and usually get 3 different flavors. My favorite is the blueberry flax and the vanilla almond granola.
