Delicious Sweet Potato Wedges

Happy New Year everyone! I don’t know about you but I am so glad 2016 is over and I am ready for bigger and better things in 2017. One thing I can promise is to continue to share healthy and delicious recipes here on Spoons and Stilettos. Our first recipe this year is simple and tasty sweet potato wedges. Why I haven’t shared this recipe is very surprising to me especially since I love to make this dish all the time. Sweet potato wedges are a great alternative to regular potatoes and they also look great on a plate.

The key to delicious sweet potato wedges is to keep it simple and not add too many seasonings because sweet potatoes are already packed with flavor.  All you need is some garlic, a little cumin and you have got your self the best sweet potato wedges. In addition to being tasty they are great served with anything from grilled meats, veggies and seafood. As you can see above I served mine with fish, asparagus and cucumber salsa. Wondering how to achieve a wedge shape, its pretty simple. All you have to do is cut the sweet potato in half then cut the half into another half. Not sure that makes sense but that is the best way I could think to describe it.

3 Reasons why Sweet Potato Wedges are a great choice

  • 4 large sweet potatoes
  • 4 sprigs Fresh thyme
  • 2 teaspoons Cumin
  • Extra virgin olive oil
  • 2 tsp Garlic powder
  • 1 tsp Salt

  • 4 large sweet potatoes
  • 4 sprigs Fresh thyme
  • 2 teaspoons Cumin
  • Extra virgin olive oil
  • 2 tsp Garlic powder
  • 1 tsp Salt

Instructions
  1. Preheat oven to 350 degrees F
  2. Peel sweet potatoes and cut into wedges.
  3. Season sweet potatoes with salt, cumin, garlic and rub with olive oil.

  4. Grease a baking dish with olive oil before placing sweet potatoes with thyme on top. Cover loosely with foil and place in the oven.
  5. After 45 minutes, remove foil and bake uncovered for about 5 minutes. Sweet potatoes should be tender when cooked.

  12. Yum!!! Love sweet potatoes! Although I season mine like crazy, cinnamon, nutmeg, brown sugar, drizzle some honey lol. Maybe next time I’ll try it with *less* seasonings lol.
