I always thought cooking a perfectly seared salmon was only possible in restaurants. This changed once I started cooking with Ghee. I don’t know what it is about this Whole30 & Paleo approved cooking fat that gives the perfect sear. It really does wonders on salmon. My favorite ghee is made by Tin Star Foods. Today I will introduce you to this wonderful ingredient with the hope you will add it to your pantry.
Ghee is the pure butterfat that is left after milk solids and water are removed from butter. It is made by cooking the butter to separate the oil from the water and solids which are then filtered until all that is left is pure butter oil. Last Friday I decided to forego the usual take out and I made a quick salmon, asparagus with tomato salad dinner. I used the ghee to saute the asparagus and to sear the salmon fillets. This was hit with my Fiancé who is usually a picky eater. He said it was one of my best meals and asked to add it to our regular rotation. For someone who loves to cook, hearing a compliment like that put a smile on my face.
Cooking with Ghee: Seared Salmon with Asparagus and tomato salad
Making a asparagus and salmon meal is quick and easy. If this is your first time using ghee this is a great beginner recipe. Find full recipe at the end of the post.
Start by heating some ghee in a cast iron pan and cooking the asparagus under medium heat. Keep the seasoning simple with salt, black pepper and minced garlic added at the last minute of cooking.
While asparagus is cooking, heat about 2 tablespoons of ghee in another large pan.Place salmon skin side down into the pan and flip it over after 3 minutes. You want the skin to nice and crispy.
Flip the salmon over to sear the skinless side. Wait another 3 minutes to allow the skinless side to develop a golden brown color.
By the time the salmon is ready the asparagus will be cooked and ready for plating. Plate the asparagus first and top with salmon and avocado wedges.
Prepare a simple tomato salad with chopped herbs, olive oil, salt and pepper. With a meal like this you want the taste of the ingredients to shine and heavy seasoning is not recommended. The end result will be a tasty and fresh tasting meal.
