Some of my favorite meals are the rustic kind that I don’t put much thought into and usually involve me throwing things together without following a recipe. These shrimp and beef tacos are a perfect example. I made them on a Friday night when we wanted something light and quick. I knew they were a hit when the BF had more than 3 servings.
Ingredients
2 cups raw shrimp
1 small package stir fry beef or skirt steak
1 avocado
2 cups shredded lettuce
steak and shrimp seasoning of your choice
6 restaurant style flour tortillas
Salsa:
2 plum tomatoes (seeds removed) chopped
1/2 a medium red onion chopped
2 green onions sliced
1/4 a jalapeno chili (seeds removed) chopped
1 clove garlic minced
1 handfull cilantro chopped
1 tbsp fresh lemon juice
2 tbsp olive oil
salt and pepper to taste
dressing:
1/4 cup mayonnaise
1/2 tsp Dijon mustard
1 clove garlic
1 tsp sriracha sauce
Directions
– Mix all the salsa ingredients in a bowl and set aside allowing flavors to combine
– Mix all the dressing ingredients and set aside
– Cook shrimp and beef in a hot pan till golden brown for about 5 minutes each, its important not to overcook the meat.
– Use the same pan you used for the meat to heat up the tortillas
