It’s the middle of April and the mandatory stay at home law is still in full effect. Being home all day every day has definitely increased my creativity and sense of adventure in the kitchen. The other day we were out of bread for breakfast and there were no open grocery delivery windows so I had to think of a plan. The old me would have just gone somewhere else to get bread but the new me decided to make their own bread. I was pretty impressed how easy it was to make this no yeast garlic flatbread.
I know what you are thinking. Making flatbread is not easy Agnes. It really is, and the secret is to use a food processor to mix your dough instead of kneading it yourself. Kneading is literally a deterrent for me when it comes to making any bread therefore eliminating that step makes the process 10 times easier. What makes this bread perfect is that it only needs a few ingredients and no yeast is required too.
Another thing that makes this flatbread special is the addition of fresh garlic and onion powder to the flower mixture. This makes it super flavorful and almost tastes like the garlic naan that you get from Indian restaurants. I also used almond milk instead of milk and substituted yogurt with olive oil. Living in these COVID-19 days has taught us to make do with what we have and substitutions have become the norm.

- Add all of the ingredients in a large food processor with double blades and process until dough combines into a big ball.
- Dust a large clean flat surface or counter top with flour. Form the dough into a ball and break it into 8 pieces then roll each small piece of dough into balls.
- Flatten each ball with a rolling pin until they are about 10 inches wide.
- Heat a skillet on medium-high heat and add a little olive oil. Cook flatbreads and flip when bubbles start showing. Do an additional flip till desired color is reached, I love mine to have some brown spots. Will be about 2 minutes for each side.
