Delicious Quinoa with pan seared Scallops and Sea bass.

Did you know that Quinoa has been named one of the worlds healthiest foods and 2013 was actually labeled the international year of quinoa. This super food is gluten free and is a great substitute for rice and pasta. In comparison to other grains quinoa is high in protein, fiber, minerals and it contains omega 3 fatty acids. Now that I have convinced you to try it I am sharing a simple quinoa recipe that I served with seafood.
1 cup quinoa
1 cup chicken broth
1/2 red onion roughly
1/2  red pepper
roughly chopped
2 green onions sliced
2 cloves garlic minced
1 tbsp. fresh ginger
1 tsp cumin
Olive oil
salt and pepper
      – Rinse quinoa, place in a rice cooker and mix with
cumin and olive oil. Add chicken broth, cover and cook till broth is fully
absorbed and soft.
 Once quinoa is cooked, fluff with a fork to
separate grains and set aside
  Heat a non stick deep wok with olive oil and
saute’ peppers, onion, garlic and ginger for 1 minute.
 Add cooked quinoa to onions, cook for another
minute and its ready to serve,
    For the scallops and sea bass all you need to do is
season with salt and pepper, cook in a hot pan with olive oil about 3 minutes
on each side.
