With Easter around the corner you will most likely need creative ways to use leftover ham. How about serving Monte Cristo sandwiches made with delicious Hatfield Ham for Easter brunch? I couldn’t think of a more crowd pleasing and delicious sandwich for brunch. The Monte Cristo sandwich is a decadent sandwich that is insanely delicious.

What is the monte cristo sandwich you ask? It is simply a sandwich made with with ham, swiss cheese slices, dipped in an egg mixture and fried in a little butter. I like to think of it as a upgraded grilled cheese sandwich. It is rich and is the ultimate comfort sandwich.

How to make a Monte Cristo Sandwich

Making this sandwich is easier that you would think. The name makes it sound fancy and complicated but just follow these steps and you’ll be golden.

First, you will need good quality ingredients; especially the ham as it is the star of the dish. You may have noticed from previous posts that I love to cook with Hatfield products. Hatfield pork products are high quality, full of flavor and simply delicious. I also like that they are a family owned, American made company that uses ethically raised meat. You can tell they take a lot of pride in their products. If you follow a gluten free diet you will be happy to know Hatfield is gluten free!

For this recipe I used the classic Ham Steaks which are very versatile. You can use them for breakfast, lunch or dinner. The Ham steaks are super convenient as they come fully-cooked and are sliced perfectly. You could grill them and have them with mashed potatoes and gravy. Another way would be to cut the hame into small peaces and mix them in a breakfast hash or even a creamy pasta dish. Using Hatfield products like the Ham steaks certainly makes meal time easy, fast and brings out my creativity in the kitchen.

In addition to the ham you will need fresh eggs, good quality swiss cheese and white bread. This is not the kind of dish were whole grain bread will work, white bread simple gives the best results for this recipe.

Now the fun part. Layering the ingredients. The order in which you layer the ingredients is important. Start with bread, mayo, cheese, ham, then bread, mayo, ham, cheese and bread. The cheese is strategically placed to bind the sandwich.

Next step is to beat 2 eggs, with 2 tbsp half & half, paprika, nutmeg and vanilla extract. Dip the the sandwich into the egg mixture and cook in a pan with 1 tbsp butter and 1 tsp olive oil. Cook on both sides till golden brown

Bacon and Cheddar Fries Recipe

It’s cheat meal day and on cheat days I go big. This month I decided to make some Bacon and Cheddar fries for Saturday lunch. Topped with sharp cheddar cheese, green onions and spicy jalapeños, they are the ultimate indulgence and absolutely delicious.

I love this recipe because it is fast, flavorful and fantastic. I also like that it is finger food that you can totally eat as a meal too. I like to serve them with sour cream on the side but you can use ranch if your prefer. If you were to serve these for your guests on game day you will be guaranteed some very happy guests. They are just that good. Toppings can be anything you want and check out more options.

Grenadian Bake & Fishcake Recipe

There are certain things in life that we all love for example long weekends, pay day, free lunches, vacations and mom’s cooking. As someone who cooks most of the time, I truly appreciate it when someone cooks for me; especially when it’s my mom or mother-in-law. Nothing beats a mothers cooking, it is just a known fact in life.

Bake & fishcake

The past two weeks my mother in law was visiting from Grenada and we had the pleasure of enjoying her cooking. Waking up to the smell of breakfast and relaxing while dinner is being prepared is the best feeling.

I loved watching her and her niece cook Grenadian dishes. Grenadian food is delicious, unpretentious and packed with lots of flavor. After all, the island is known as the ‘Isle of Spice’ which means you can expect aromatic and well seasoned food. I especially liked learning how to make the popular bake and fishcake breakfast/brunch dish. Bake & fishcake is made with bread that is baked or fried in oil. The bread is usually served in sandwich form with fried fishcakes (bacalao mixed with fresh seasonings) and veggies.

After falling in love with the dish I decided it would be the perfect dish to share with you. Keep in mind there are many ways to make bake and fishcake so this is just one way to do it. One thing in common with all the recipes is they taste amazing no matter how you cook or eat them.

How to make Bake & Fishcake

Step 1. Prepare your ingredients. For the bakes you will need 6 cups all purpose flour, 2 tbsp baking powder, 2 tsp instant yeast, 3 tbsp sugar, 1 1//2 cup butter or butter substitute and a tsp salt.

Step 2. Mix flour with baking powder, yeast, sugar, salt and add butter. Mix the butter into the flour mixture using the rubbing in method. Prepare for messy hands here but make sure your hands are washed before you begin.

Bake & fishcake kneading dough

Step 3. Add fresh coconut blended with warm water into the flour mixture (about 2 cups) and knead till a soft well blended dough is created. You can also use canned coconut milk. It is best to knead on a clean kitchen counter if you don’t have a large board.

Bake & fishcake flour dough ball

Step 4. Form the dough into a large ball and let sit for about 10 minutes. At this point it is a good time to preheat the oven to 350 degrees F.

Step 5. Break the dough apart into small balls. Flatten the balls and place in a greased baking tray and bake in the oven till browned on both sides. Usually for about 15 minutes. Make sure you keep an eye on them to prevent burning.

coconut bake

The result is perfect hard on the outside, soft and fluffy on the inside bread. Next steps is to make the the fish cakes.

salted cod

Step 6. Place desalted saltfish in a large bowl. Salt fish can be desalted by boiling the fish and changing the water till the it reaches your desired salt level. Remember to set aside 2 cups of the salted water for later.

Step 7. Grind cloves and garlic using a pestle and motar. Be warned the aroma of these 2 ingredients combined is so good you will find yourself constantly sniffing it.

Step 8. Chop onions, seasoning peppers, garlic, fresh thyme and green onions. Add to the salt fish together with the clove and garlic mix.

Step 9. Add about 1 1/2 cups of flour and the reserved water from the saltfish boil and mix till a fluffy consistency iss reached.

Step 10. Fry the fish cakes on both sides till they reach a golden brown color and are crispy on the outside. Place cooked fish cakes on a platter lined with paper towel to drain excess oil.

Bake & saltfish

When ready to serve, slice each piece of bread in half and place a piece of fish cake between the 2 slices. The result is a simple but super delicious bake and fishcake sandwich. It is almost impossible to eat just one because they are just so good. You could go all out and add tomatoes, lettuce and all sorts of fun stuff however these are still awesome served as is. Easy Oven Baked Vegetable Frittata

Frittata! Isn’t it a word that you would like to say 10 million times because it has such a nice ring to it. A frittata is an Italian dish made with beaten eggs. The word frittata comes from the Italian verb “friggere” which means “to fry”. Frittatas are a dish often made when one has leftovers that they want to use up. This is exactly how this easy oven baked vegetable frittata came about. I had some leftover broccoli that I had to use.

Made this oven baked vegetable frittata for brunch and served it with sliced avocado. I did not need bread as it was quite filling. Super simple and smells delicious! This easy recipe can be adapted to use with whatever vegetables you have on hand. Different fillings include potatoes, carrots, spinach, kale, fresh herbs and more. For the meat lovers you can add bacon, ham, leftover ground beef, even salmon. I have heard of people adding pasta to their frittatas which I have yet to try.

If you are trying to get your children to eat vegetables frittatas are a great way to do it. Better yet, it is a affordable meal for the family.

Have you made a frittata? What do you like to add to your frittata? I would love to hear and learn from you in the comment box below. If you are looking for more breakfast ideas read my post on 3 quick breakfast ideas.

Easy Eggs Benedict Recipe

Did you know that Eggs Benedict is one of the most popular brunch menu items? I always find myself ordering eggs Benny whenever I go out for brunch so I decided to try to make it myself at home. Eggs Benedict is simply an English muffin topped with bacon or ham, poached egg, and a creamy hollandaise sauce layered on top.Easy Eggs Benedict Recipe

Executing the perfect Eggs Benedict can be tricky but it’s pretty straightforward once you get the gist of it. For my first attempt, the results were actually good and I feel great about sharing my easy recipe with you. What makes it easy is the blender hollandaise sauce. The traditional method of making hollandaise is using a boiler but ain’t nobody got time for that!

My hollandaise sauce had a thinner consistency but I actually liked the light sauce. If you prefer a thicker and richer sauce you can add more butter. When making this dish, counting calories is out of the question as it is an inherently rich dish. This is the kind of meal you make once in a while so why not go all out.

Easy Eggs Benedict Recipe

With Valentine’s day coming up you can prepare Eggs Benedict for that special someone. They will certainly feel special when you serve this delectable treat. Go ahead and make some mimosas or serve with freshly squeezed grapefruit juice. Either way, you will feel like a MasterChef and you will get a lot of praise.
