Hello loves! Now that spring is here I know you are probably thinking of new fun recipes to add to your dinner rotation. This bulgur wheat salad with cherry tomatoes, cranberries, red peppers, green onion and a herb citrus dressing is a nice break from rice or pasta. It is so easy to make and is very delicious. Eat it alone or serve with fish, grilled chicken or any protein of your choice.
Bulgur Wheat salad recipe
1 cup bulgur wheat
1 1/2 cup chicken broth
1 tsp cumin
1 cup halved cherry tomatoes
1/2 cup dried cranberries
1/2 small red pepper diced
2 green onions
1 handful fresh cilantro and parsley
2 cloves garlic
juice from 1 small orange
zest from 1 small orange
olive oil
salt and freshly ground pepper
Directions
- Preheat a medium saucepan, add 1tbsp olive oil, cumin and bulgur wheat and cook for 2 minutes.
- Add chicken broth wait till it reaches boiling point and then reduce heat to medium low and cover pot.
- While bulgar is cooking mince and mix the last 6 ingredients in a food processor and set aside.
- Once bulgur wheat is cooked, fluff with a fork and let cool for about 15 minutes then add tomatoes, peppers, cranberries and mix in herb citrus dressing.
Introducing ingredients like bulgar wheat to your meal rotation will break the monotony and best of all is good for you. This recipe can be used with quinoa and you can pretty much add what you want to the salad, It happened to be the end of the week and I did not have much in the fridge. I think some feta, cucumber, apple or radishes would have been a great addition to this recipe.

I have never had bulgar, but I really enjoy pearl couscous. I will have to keep my eyes out for some bulgar the next time I am shopping.

its very similar to quinoa but has lower nutrient density than quinoa. I prefer quinoa but sometimes i like to switch things around.

Hi Julie, Bulgur wheat is not cous cos but it does have a strong resemblance to it. Thank goodness summer is almost here to enjoy it.
Ooh! I love how light and healthy this looks! I don’t think I have had bulgar wheat before but I think I would like it. I would probably add in some feta cheese like you suggested into it for a little tang. I think it would go well with the flavors! Thanks for the inspiration!

Delicioso! This would make a complementary dish to any other foods we serve. I could see this made from/with quinoa and even couscous.
