Shrimp Macaroni and Cheese

Last Sunday I was in the mood for some comfort food so I looked around and noticed I had some cheese and shrimp in the fridge. I always have pasta and flour in my pantry so I thought what could be more comforting than good old delicious Mac and Cheese. I decided to make a shrimp Mac and Cheese instead of plain. The secret to my dish is turkey bacon which gives it a nice flavor. This dish is very rich and high in calories so I make it once in a while. I do not believe in depriving myself of the things I love in order to be healthy, the key is moderation. I served my Mac and Cheese with a green salad. If you are not a fan of shrimp you can skip it or add tuna or shredded chicken .Yummy!
Ingredients
1 pound elbow Macaroni
1 pound frozen shrimp chopped
1 1/2 cup shredded cheddar cheese
1 cup grated Parmesan cheese
2 1/2 cups half and half
2 tbsp butter
1/4 cup all purpose flour
2 strips turkey bacon
1/2 cup panko bread crumbs
1 small onion finely chopped
2 cloves of garlic minced
1/2 cup fresh parsley chopped
Adobo seasoning
Directions
  • Preheat oven to 350 degrees F.Cook macaroni according to package directions and make sure it is al dente to prevent mushy results.
  • In a large sauce pan cook the bacon, chop and set aside.
  • In the same pan, add onions and garlic and cook till onion is soft.
  • Melt butter in the onion mixture, add flour and cook for 1 minute stirring constantly. Add milk and whisk until mixture is smooth. Simmer for about 5 minutes until sauce has thickened. Season with adobo seasoning
  • Place strained macaroni in the sauce, stir in Cheddar cheese, Parmesan cheese, shrimp, bacon and parsley. Make sure you set aside some parsley and chopped bacon for garnishing.
  • Mix with wooden spoon and place in a baking dish. Top with some Parmesan cheese, parsley and panco breadcrumbs. Bake for 15-20 minutes.

I am certainly one of those girls that like the finer things in life. The only problem with this is that I do not have a budget to match my love for these things.My mother is probably one of he most stylish women I know and she has a love for bags which my sister and I have inherited .Occasionally she gives my sister and I bags she doesn’t use anymore. Recently I got a canvas Louis Vuitton bag which I love from her and it inspired me to post an article on designer bags.
For those of you who cannot afford thousand dollar bags ,fear not because you can still look like a million bucks without breaking the bank.A lot of designers like Michael Kors , Zac Posen and Coach make bags that will give the high end brands a run for their money.Since I don’t like to buy anything fake ,I prefer to buy less expensive bags that are still of high quality.Below are three suggestions of bags that look similar to high end designer bags.Now some of you may think brands like Coach are still pricey, my suggestion is to put away at least $50 a week for about 2 months to buy your bag that way you don’t have to use that credit card.

Easy Chick Pea Salad

I am always on the lookout for quick healthy dishes and I recently came across a chickpea salad recipe on a can of chickpeas. I recommend that you always look behind food packages before you throw them away. Most packages have recipes that are easy to make and they usually don’t involve a million ingredients. I cannot wait to try a coconut fish sauce recipe that I saw on a can of coconut milk the other day, I’m sure I will let you guys know how it turns out.
Today I am going to share a fresh chickpea salad recipe, as always I like to add my on twist to the dish by adding fresh cilantro. If you are not a big fan of cilantro you can use fresh parsley.

I had my salad with potato latkes and barbecued chicken wings

Ingredients

1 15oz. can chick peas / garbanzo beans
I small cucumber chopped.
1/2 cup red pepper chopped
1 small red onion
1 tbsp balsamic vinegar
3 tbsp olive oil
1/4 tsp each garlic powder and oregano
2 tbsp fresh cilantro or parsley  finely chopped.
salt and pepper to taste

Directions

  • toss all ingredients together ,chill and serve

My mum gave me my first bottle of Chanel perfume a few years ago and since then I have an appreciation for fine fragrance. I believe every woman should wear a good perfume and I am not talking about those celebrity scents that you get at the drug store. I find fragrances to be an extension of one’s style and personality.
I am most definitely a Chanel girl so my favorite scent is Chanel No. 5 Eau Premier; this fragrance is lighter than the classic no.5 making it great for everyday use.
If you are looking for a new scent I recommend trying Jean Paul Gaultier, Dior and Gucci as they have amazing fragrances. I know these  are a little pricey, but trust me it’s better to invest in a long lasting scent rather that a cheap bottle that will have you back at the store in no time. After all you deserve to smell good so why not treat yourself!

Lemon and herb roast Chicken

Making roast chicken may seem like a daunting task for the inexperienced cook, however It is one of the simplest ways to make chicken in my opinion. Instead of buying rotisserie chicken at the grocery store try to make your own at home.Today I will share with you a simple recipe  that I use often , the curry powder gives it a nice unique flavor.All you will need for a roast chicken is an oven and a few spices and herbs, did I mention you will have loads of leftovers for chicken sandwiches, yummy!

The picture below is of a roast chicken made by my awesome brother Ash. I would like to mention that this was his first roast chicken. So proud !

Ingredients
 1 4 pound chicken
1/2  a stock celery
onion powder
1 lemon
4 cloves garlic
handful of fresh rosemary , thyme and sage
2 tbsp butter or olive oil
1 tsp mild curry powder
salt and pepper

Directions

  1. Preheat oven to 350 degrees F.
  2. Rinse the chicken in and out ,pat dry with paper towels
  3. Squeeze half the lemon around chicken and rub butter or olive oil all over the chicken.
  4. Sprinkle generous amount of salt, pepper, curry powder and onion powder all over the chicken including the inside.
  5. Place garlic, celery , herbs , a little butter and half the lemon inside the chicken cavity .
  6. Place chicken in roasting pan along with any vegetables of your choice, make sure you coat vegetables with olive oil and place a few sprigs of rosemary in the pan.
  7. Bake uncovered for 2 hrs ,make sure you let chicken stand for about 10 minutes before carving.
