Who doesn’t like easy weeknight meals, I know I like something delicious and quick during the busy work week. After the success of my previous post on easy dinner ideas I have decided to share more meal ideas for you to try. These Easy weeknight meals are delicious and full of flavor.

3 cheese pasta with egg whites
The reason for egg whites in this meal is because the yolk was used to make the sauce and I did not want to throw away the whites.
Recipe: Cook pasta per package directions. While pasta is cooking beat 3 eggs yolks in a bowl, add 1/4 cup cream followed by 1/4 cup parmesan cheese, mix till well blended and set aside. Heat a large deep pan, add 1 tbsp of duck fat or butter, 3 cloves of minced garlic and cook for about 1 minute. Add the sauce to the garlic and simmer for 3 minutes then mix in pasta with fresh basil leaves, capers, cherry tomatoes, mozzarella balls and shredded cheddar cheese. cook remaining egg whites and serve.
Tip: You may skip the egg whites and use them for something else later. This meal serves 3 people, I used 3 1/4 cups pasta.

Surf and turf plate
This is one of my favorite dishes and it is really easy to make so don’t let the steak and shrimp intimidate you.
Recipe: Cook rice in a rice cooker so you can focus on the other components of the dish. While rice is cooking season skirt steak and shrimp with your favorite seasoning preferably something robust. Set the meat aside and make a simple salsa with chopped tomatoes, red onion, cilantro and red peppers. Dress the salsa with a tsp lime juice, olive oil, salt, cumin and pepper. Shred some romaine lettuce and mash avocado with salt, a drop of lime juice and pepper. Cook steak and shrimp on stove top till done to your liking about 10 minutes. Let the steak stand for 5 minutes before cutting and serve.
Tip: I used the Trader joe’s barbecue rub with coffee & garlic to season my meat, this rub is amazing!

Oven baked chicken, fries and salad
This is similar to one of the dinners I shared previously however this time I made a cucumber radish salad on the side. I make this oven baked dish every other week because its just that good.
Recipe: Preheat oven to 350 degrees F. Line deep baking dish with foil and spray organic olive oil non stick spray over the foil. Layer a small package of precut oven fries in the dish, top with seasoned chicken wings and cook in the oven for about 45 minutes. While chicken and oven fries are cooking gently mix 2 sliced persian cucumbers, 1 radish, red pepper, handful cherry tomatoes, 1/4 red onion and avocado in a salad bowl. Dress the salad with a light dressing of olive oil, lemon juice, salt and pepper. Once chicken is cooked serve and enjoy!
Tip: Marinate the chicken the night before so that when you get home it is ready to cook and flavors have developed. I marinated the wings in a sweet and spicy Korean barbecue sauce with fresh garlic.

Sometimes it’s hard to be creative when you’re working with so little time to cook during the week, but these are great ideas! I’ll have to do a turf and surf for my husband soon.

I’m on the hunt for more weeknight meals and these all look so delicious! The surf and turf plate sounds like my favorite. I buy shrimp quite often because it’s so easy to cook and you can eat it with ANYTHING. It also makes your dish seem a little more fancy when there’s shrimp in it 😉
