I am so excited to share these 2 delicious zoodle recipes today. As you may have noticed I have been talking about zoodles a lot lately and this is because they are the best thing ever. I seriously can’t stop making them and my family is also in love with them. If you are not sure how to make zoodles you can check out my post on how to do it here .
Zoodle Recipes: Zoodles with lemon curry sauce
Many people associate zoodles with summer dishes however zoodles can be made into hearty dishes perfect for cooler temperatures. These zoodles are served with a warm lemony curry sauce.
To make the curry sauce: sauté minced onion, garlic and curry powder in olive oil for about 2 minutes then add chicken broth, juice from half a lemon and simmer for 10 minutes. Add zoodles and fresh tomatoes, cook for 2 minutes and serve.
Zoodle Recipes: Teriyaki Salmon with lemon and herb zoodles
I cant even begin to tell you how many times I have made this recipe since I started making zoodles. This is a very light and fresh meal, perfect for low calorie diets and it is very nutritious.
Season salmon with teriyaki sauce and let sit for at least 15 minutes before cooking. Meanwhile make the zoodles and mix with lemon herb dressing. To make the dressing mix 2 tbsp extra virgin olive oil, juice from 1 small lemon, 2 minced garlic cloves, 1 handful fresh parsley finely chopped, salt and pepper.
